Squash and Coconut Milk Stew

This was lovely. My small children loved it. Great quick, low fat family dinner in the week. Used reduced fat coconut milk from Trader Joes to lower calories. It was still creamy and very delicious. Add salt gradually and taste frequently. Also, used less sugar than recommended. Flavors are subtle so season carefully. I will make this again. Used silken tofu and it was creamy and added protein. (Peel squash with potato peeler as it is too time consuming with a knife.) Thanks for the recipe!

Slow Cooker Lentil and Ham Soup

Excellent recipe. Proportions were perfect. I followed some of the suggestions, added stewed tomatoes, a smoked ham hock and extra water. It turned out delicious and is a keeper -- thanks!

Pasta With Spinach Sauce

This was not as good as I had hoped. My family did not really like the cream of celery soup undertones -- tasted liked canned soup. (Which of course it was.) I will try it again, with vegetable stock instead, I think, and add some pureed celery.

Garbanzo Bean Salad

This was good. Adjust to your family's specific tastes, but I would recommend using the best garbanzo beans you can find. I used Safeway Organic brand (they were on special) and they were too mushy. Salad was not as crunchy as it should have been.

Winter Lentil Vegetable Soup

This was pretty good. It was a little too "cabbagey" for my family, and next time I will use less cabbage. The lentils cooked up beautifully tho' and were very nicely proportioned in the dish, not too heavy and thick yet substantial enough. I served this topped with broiled fresh salmon, which was great as the flavors complemented each other perfectly. In fact it made for a quick make ahead dinner. Lentil soup made earlier in the day and then reheated and fish broiled with salt and pepper 5 minutes before serving. Low fat, nutritious and waistline friendly!

Pumpkin, Sweet Potato, Leek and Coconut Milk Soup

This was really good - exceeded expectations. From a nutrition point of view it was excellent. The pumpkin (I used butternut squash)and sweet potato has a low G.I. and the servings are low in fat. My family ate a delicious low fat, vegetarian, high in vitamin and mineral soup with a lower glycemic index. Definitely a keeper. Thank you!
