Finishing school at CU Boulder. I love food and recently became a vegetarian. It has been the best decision I've made in a long time. Not only is it a great lifestyle change, but it has rational economical purposes. I get sick of explaining this to people when I eat out with groups. If you haven't thought about it before, you should read up on it. It's fantastic for the mind and body. I would like to get better at cooking vegetarian and cooking in general.

I'm half Mexican so that's mostly where I get family recipes from.
My family makes great: tamales, Spanish rice, renallos, enchiladas, and tortillas
I would like to explore vegetarian alternatives to these dishes.
My cooking triumphs
I suppose this would be my cookies. I make them and people love them. They are always a triumph even on their worst days!
I also have made great cooking strides while cooking for my boyfriend. I have stepped out of my comfort zone to impress him and trick him into loving me. ;)
My cooking tragedies
The worst yet is eggplant Parmesan for a group of people. It was soggy and disgust. I don't know how to work well with eggplant yet.
