About this Cook
Finishing school at CU Boulder. I love food and recently became a vegetarian. It has been the best decision I've made in a long time. Not only is it a great lifestyle change, but it has rational economical purposes. I get sick of explaining this to people when I eat out with groups. If you haven't thought about it before, you should read up on it. It's fantastic for the mind and body. I would like to get better at cooking vegetarian and cooking in general.

My favorite family cooking traditions
I'm half Mexican so that's mostly where I get family recipes from. My family makes great: tamales, Spanish rice, renallos, enchiladas, and tortillas I would like to explore vegetarian alternatives to these dishes.
My cooking triumphs
I suppose this would be my cookies. I make them and people love them. They are always a triumph even on their worst days! I also have made great cooking strides while cooking for my boyfriend. I have stepped out of my comfort zone to impress him and trick him into loving me. ;)
My cooking tragedies
The worst yet is eggplant Parmesan for a group of people. It was soggy and disgust. I don't know how to work well with eggplant yet.

Vegan Banana Blueberry Muffins
This recipe was way too dry. I added a couple tablespoons of water and 1/8 c. vegetable oil to make it pourable into the tin. I also added baking soda to make them rise a little more.

Twice Baked Potatoes II
Pretty delicious! Depending on the size of the potatoes longer cooking may be required. If you have the time, this is an easy recipe and tastes GREAT!
