Creamy Pesto Shrimp
Huge hit with my hubby! I made it with Chicken for New Year's Eve, and the family loved it! Definitely going to make more regularly! I did sub half and half for heavy cream, and it turned out just fine. I also added in baby bella shrooms and my sister thought it tasted like her fav dish at her fav restaurant.

Crawfish Chowder
I give it a 4 only because I added turkey sausage as suggested, but I didn't like it. I also didn't have 2 cans of cream of potato, so I increased the half and half by one cup and added more cream cheese. I took the sausage out of it, and after letting it sit in the fridge over night, it was pretty tasty! I added Old Bay as well, thought it was a nice touch--I think it was a little too fishy for my hubby, he didn't really like it at all.

King Ranch Chicken Casserole III
I changed the recipe a little, combined this one with Carol's King Ranch Casserole. I boiled the chicken in crushed red pepper and chicken and tomato boullion, and used the broth in the soup mix with green pepper, onions and chili powder and cumin. My husband couldn't stop raving about it--and eating it! Definitely a keeper! Next time, I want to try some enchilada sauce on top after the tortilla gets crisped from baking and add cheese on top of that.
