Salsa Chicken Rice Casserole

I followed this recipe exactly and the onion was WAY too strong in it. No one in my family would eat it but me! I will probably try this one again, but either leave out the onions or saute them first in some olive oil.

Quick Hoppin' John Soup

I'm sure this is fantastic as written! I didn't have a wild rice mix, so I added about 1 1/2 c. white rice and seasoned with some creole seasoning, a bay leaf, cayenne and black pepper. I also added diced onion when I was cooking the sausage. Before adding the rice, I let it simmer, uncovered, for about 30 minutes to reduce the liquid and let the flavor intensify a bit. The final result wasn't really a soup, but more of a casserole consistency. I served with hot cornbread. It was perfect for our New Years Day meal!!

Fantastic Focaccia Bread

This recipe is so easy and turns out great. I'm not usually that great at yeast recipes, but this one did exactly what it was supposed to.... very versatile also, would be great with different toppings (garlic, cheese, olives, onions, jalapenos, etc.)

Morning Glory Muffins I

Great for a healthy snack or breakfast! I made them with 1 c. white flour and 1 c. whole wheat, 1 c. turbinado sugar instead of white sugar, used only egg substitute, and left off the nuts. Only 175 calories each this way!

Awesome Slow Cooker Pot Roast

This was very good, but the meat wasn't as tender as I would have liked (maybe it was the cut of meat I used?). The sauce made a great gravy over mashed potatoes.

Pizza Dough III

This was delicious! I quadrupled the recipe (I have a large family) so we could make 4 pizzas. It was a little overkill.... they turned out to be 4 thick pizzas. Luckily, we all like thick pizza crusts... but next time, I'll just triple the recipe for 4 pizzas. Definitely worth a little effort (although for a yeast dough, it's super easy)!
