French Baguettes

Reviewed: Feb. 24, 2013
The bread was good but there was no crunch to this crust at all, it had a very thin crust, the only crusty part was where the egg yolk was, and there was yolk all around the bottom edge of the rolls. I will keep looking for the perfect baguette.

Easy Iced Coffee

Reviewed: May 28, 2011
this definitely was tasty. I used Starbucks Via instant vanilla coffee. I doubled the coffee and sugar, used crushed ice, used about 9-10 oz milk and then added a tiny splash of caramel creamer I had. SO yummy.

Mom's Turkey Sausage Patties

Reviewed: May 20, 2011
This was SO good. Way better than any packaged turkey sausage I have ever had. I doubled the spices, and then I added extra sage and salt but I should have just kept it at doubled.

Belle's Hamburger Buns

Reviewed: Feb. 1, 2011
:: Start with only 4 cups of flour!! The 5.5 cups it calls for is TOO MUCH:: These rolls were perfection. I used rapid rise yeast instead of active dry yeast and I used brown sugar instead of white (becuase it was what I had on hand). I only needed 5 cups of flour, the dough was pretty dry at 5 cups, next time I will start with4.5 adn add in the other flour as needed while kneading. The kneading for the full 10 minutes really paid off. These rolls are absolutely delicious. Next time I think I will add some dried onions and make onion sandwich rolls. Update!! This recipe makes PERFECT garlic bread sticks. I followed everything exactly except I use the rapid rise yeast and bread flour and then roll them into sticks. Brush them with butter before they go in the oven, and again after they come out and then dust them with garlic salt. THey were better than olive garden!

Cinnamon Stove Top Granola

Reviewed: Jan. 8, 2011
The first time I made this, I changed a LOT about it. This time I stuck to the recipe except that I added an extra cup of oats, and I added in about 1/2 teaspoon almond extract to the butter/sugar mixture. I omitted the olive oil in the beginning because I didn't have any and the oats toasted up just fine without it. This granola is almost perfect. The only thing I wish is that it was a little crunchier but it's good just as is.

Homemade Chewy Granola Bars

Reviewed: Nov. 18, 2010
I probably shouldn't even rate this becuase I've changed it a lot, but here goes... I love this recipe. I made it nut free and wheat free for my son's class. I left out the sunflowers, sesame seeds, and wheat germ.I replaced the peanut butter with sunflower butter, And instead of all corn syrup, I used about 1 TBSP of corn syrup and the rest honey. Everything else was the same though. When this came out of the oven it was VERY "runny" or "mushy" so I put it in the fridge and it set right up. Next time I make this, I will use less honey and less butter and maybe add in a little applesauce, and some gluten free rice puff cereal.

Chicken Pot Pie IX

Reviewed: Oct. 29, 2010
I am cooking this in my oven right now. I tasted the filling and it's perfect. These are the changes I made though, I used 1/3 cup half and half and 1/3 cup 1% milk. I used home made chicken stock instead of broth because it's what I have on hand. When I was cooking the onions in butter, I was heating up the chicken in the stock (I used about 4 cups) and it reduced down to almost the exact right amount that I needed. The flavor of the stock was intensified because of this. I also added about 1/4 tsp thyme and between 1/2-1 tsp sage. without those extra two spices, it was just too bland for me. Cooked in a deep dish pie plate with refrigerated pie crusts. This is going to be delish.

Clone of a Cinnabon

Reviewed: Oct. 22, 2010
This is SO SO delicious. The only thing I might do next time is double the cinnamon/brown sugar an butter. I definitely don't think that it was gooey enough in the middle. Still amazing though. I've made this several times, it's the only recipe i use!

Oatmeal Pancakes II

Reviewed: Oct. 7, 2010
The only reason I'm giving this recipe 3 stars is becuase my kids ate it. The taste wasn't TOO bad, but honestly these were the flattest pancakes I've ever made. They were WAY too watery right off the bat, I added a bit more flour but that didn't help much. These weren't fluffy at all and nothing like the picture I see. I don't think I did anything wrong here. My baking flour/soda were both new and all my ingredients were fresh. I'm not sure how mine went so wrong. I even let the dry and wet sit a while hoping that the wet ingredients would soak into the oatmeal and that helped a TINY bit but not much.

Chewy Granola Bars

Reviewed: Sep. 16, 2010
These are really wonderful. I have made them several times. I have found that baking a half recipe and adding 1/4 cup applesauce. These are a lot more like a breakfast cookie than a granola bar but regardless they are delicious and my kids love them. I tried using wheat flour but they were a bit crumbly.

Cream Cheese Frosting II

Reviewed: Aug. 11, 2010
I need to start this off by saying that I LOVE cream cheese but I needed to up the sugar by more than double. Good idea but without the doubled sugar this wasn't a frosting, it was just a semi-sweet cream cheese spread.

Blueberry Buckle

Reviewed: Aug. 2, 2010
The taste of this was delicious. I thought that all the topping would be too much but I really enjoyed all the crunchy sweetness on top. BUT the only reason I can't give it 5 stars is that it's very dry and crumbly. Still awesome but I would have preferred a moister cake. Perhaps I'll try oil next time instead of butter.

No Bake Cookies V

Reviewed: Jul. 10, 2010
Used butter instead of margarine, and imitation vanilla only becuase we ran out of real. I used 3/4 cup of natural creamy peanut butter, and just a TINY bit more sugar than called for (maybe an extra few tablespoons?) Everything else was the same. Used Irish quick cooking oats this time (McCann) and these turned out delicious this time. I can't even keep my families hands off them while they are setting. I omitted the salt because I find the natural peanut butter to be a bit more salty than the regular creamy or crunchy.

Coconut Ice Cream

Reviewed: Jul. 7, 2010
I wish I could give 4.5 stars becuase it was almost perfect. This was very very good. I didn't use the flaked coconut at all because I don't like the chewy texture of it in ice cream, but I did everything else the same. My grocery store was out of heavy cream so I had to use whipping cream. After frozen this was just ever so slightly icy. Next time I will skip the milk and use all heavy cream and I think it will be PERFECT. I used Goya brand Cream of coconut. Delicious.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: May 29, 2010
This was really a nice recipe. I felt like the chicken needed a little more flavor. NExt time will marinate the chicken in the sauce for a while before cooking. I also did'nt feel that the flour added anything to the dish, I will leave it out next time. :)

Oven Roasted Red Potatoes

Reviewed: May 28, 2010
I'm not sure how someone could burn these without cooking them WAY too high or way too long. I usually cut mine into wedges instead of cubes and follow all other directions to a T... They DO stick if you don't liberally oil the pan, or use parchment.

Salsa Chicken Burrito Filling

Reviewed: May 23, 2010
This tasted wonderful, but the execution could be changed a bit. I found it really difficult to pull the chicken apart in the sauce. I also add a bit more sauce and let it just do it's thing or I've also pre boiled the chiken then added the shredded chicken to this sauce and let it cook down a bit. I think it would be great in the crock pot as well.

Chocolate Chip Banana Muffins

Reviewed: May 23, 2010
I've made this recipe over and over and everyone LOVES it. I do adapt just a tiny bit. I use 1 cup AP flour, and 3/4 cup whole wheat flour and I usually use only about half the oil. Other than that I keep everything the same. I bake these into mini muffin cups for about 12 minutes and they come out perfect EVERY time :) Update: I just made these again today and I think they were the best EVER this time and I changed a few things. I didn't have any yogurt or sour cream so on a hunch I used a big scoop of mayo (I know sounds gross but I've heard of mayo added to cakes and it makes them really moist) and then to replace some of the liquid I drizzled in some egg nog. I think milk would have worked just as well. 1/3 cup of vegetable oil and mix JUST intil incorporated. A total of 3 bananas mashed with a fork. I can't even say how delicious they were.
