Whole Wheat Beer Bread

Reviewed: Jan. 19, 2009
This bread was really quick and easy to make. I served it with minestrone soup, and the leftovers have served as really yummy toast for breakfast the past couple of days. I followed the recipe exactly, and will probably try it with all whole wheat next time to see if I like it as well. Thanks for a great recipe!

Jamie's Minestrone

Reviewed: Jan. 19, 2009
This soup is delicious! I love the abundance of vegetables. I used frozen green beans instead of canned (better for you) but otherwise followed the recipe exactly. I served it with the whole wheat beer bread from this site (also delicious) and it made a great dinner for a winter night.

Favorite Chocolate Cake

Reviewed: Jan. 13, 2009
I made this into cupcakes, and they turned out really well. For me, at least, the batter turned out really thick, almost like chocolate mousse (and was really yummy!) I baked the cupcakes at 350 for about 15 minutes. They were not overly sweet, which worked well with the super-sweet frosting we put on top. We'll make them again.

Honey Wheat Sandwich Rolls

Reviewed: Jan. 13, 2009
These rolls are great, and my husband loves them too. They're very soft and perfect for sandwiches or burgers. I followed the recipe exactly, and next time will experiment with more whole wheat to see how it affects the recipe.

Amazing Whole Wheat Pizza Crust

Reviewed: Oct. 29, 2008
I use this recipe all the time now. It is great. I throw all of the ingredients into my bread machine on the dough cycle and it does the heavy work, and then I cut it in half, roll out one half into a crust and make breadsticks with the other. I use all whole wheat flour and add a T. of wheat gluten to help it rise. My family loves it for our weekly pizza night! For the breadsticks, I just drizzle olive oil and sprinkle with coarse kosher salt and freshly ground pepper, and pop in the oven with the pizza. All are done in 10-12 minutes at 425. Thanks for a great recipe!

Baked Pork Chops I

Reviewed: Oct. 10, 2008
This was pretty tasty. I agree with other reviewers, does not need so long in the oven. I prepared the chops as described, and then put them in the oven for 30 minutes. I mixed up the sauce in a saucepan and preheated it, so I could reduce the remaining baking time to 15 minutes. The internal temp of the chops was at 155 at 30 minutes, so it was basically fully cooked then (just needs to hit 160). The chops had a great comfort food taste, and the sauce was really delicious. I served it over a wild rice blend. The only problem I had was the chops were a little tough. Perhaps that is my fault, if I had cooked for the whole 1.5 hours, with the last hour in the sauce, maybe they would have softened up. I was worried, though, that any further cooking would over cook them.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 9, 2008
This recipe is delicious, but the best part is how quick and easy the preparation is (5-10 minutes!). I took the advice of several other reviewers and did not cook the chicken prior to putting it in the slow cooker, and it was beautifully cooked, tender and moist, when I got home from work. I also added a can of black beans to make it a little heartier. Otherwise, followed the recipe to the letter. Some of the best tortilla soup I've ever had. I served it with avocado slices, sour cream, cheddar, and cilantro sprinkled on top, and chips on the side for scooping it out of the bowl. It was a big hit with my family. This is a perfect recipe for a busy mom (or dad)!

Glazed Meatloaf I

Reviewed: Oct. 2, 2008
After reading all of the reviews, I was expecting a lot more out of the sauce. It was too sweet for my tastes. The meatloaf was great, though. Next time I think I will cut out the brown sugar for a more savory/less sweet overall flavor. I also used ground bison instead of beef, since that is what I had. It turned out really well.

Simple Baked Apples

Reviewed: Oct. 2, 2008
This dish is delicious! The blend of spices is just right. I had pecans and craisins on hand so that's what I used and I really think the craisins added a nice touch, but I am sure using regular raisins would be really good too. I used a blend of three apples - honeycrisp, macintosh, and gingergold. It got rave reviews at the dinner I brought it to. Will definitely make it again!

Cuban Black Beans II

Reviewed: May 28, 2008
This recipe is great! I used less oil (about 2 T total), and added a little hot sauce for a kick. I also added about a 1 T each of garlic powder and onion powder. Turned out delicious. My 2 year old ate all of hers and asked for more! Oh, and I only had to simmer it for about an hour, which was a nice surprise because I expected it to take longer.

Fabulous Homemade Bread

Reviewed: Dec. 30, 2007
This is a fabulous bread recipe! I haven't ever had much luck making homemade bread. It always turned out like a brick, until this one! It was light and fluffy. I assembled and kneaded it in my new stand mixer, and I only made a half-batch. I don't think I used quite as much flour as the scaled back recipe recommended, maybe 1/2 to 1 cup less. I also made 2 instead of 3 loaves, and they were big and beautiful, way over the top of the pan. Both big loaves are almost gone in 2 days! I will definitely make this again.
