Monster Cookies VIII

Just finished these and DH found them to be o.k. They were a bit too "cakey" & not very sweet. I think that had to do with the addition of baking powder to the cake mix. I misread the recipe & added 2/3 cups of oats & 1/2 cup butter. I found it to be enough butter because the mixture was quite oily. I used a Pillsbury Classic Yellow cake mix which has pudding in it; omitted the chocolate chips but added raisins instead. Will try again but omit the baking powder & increase the oats as well. I think we were expecting more of a soft chewy oatmeal type cookie. They are a very easy & fast cookie to make.

Apple Spice Dump Cake

I've been making dump cakes for 3o yrs and NEVER thought to spice them up! I've always used yellow cake mix. Baked this tonight with yellow cake mix as I don't normally buy spice cake mix & WOW! I will now always add the spices. They gave the cake a little pizazz. My husband & granddaughter had 2 helpings each! Will definitely try with the spice cake mix next time. I'm so glad I happened to be looking for something a little different.

Amish White Bread

I've been baking bread for over 40 yrs but never have baked a simple white bread. This is the best tasting white bread. Hands down, the easiest recipe to make. My husband nor I found this bread too sweet. The only thing that differed from the instructions was the 2nd rising. It took a little over an hour for the bread to rise 1" over the pan. They baked beautifully but stuck to the pans which were well oiled. I believe it's because I baked them in Corning Ware loaf pans. I'll try (as others have suggested)several different ways to use this wonderful bread recipe: half honey wheat,dinner rolls,cinnamon raisin. Thanks Peg for a GREAT reicpe!!
