Baked Brussels Sprouts

My 6 and 4 year old nephews asked for three servings of this. Amazing! They did cook for an extra ten minutes or so. I was just hoping to introduce brussels sprouts to the family in a more delicous way than I remember them, but these were fantastic! I always hated these as a kid; I guess they just needed a good recipe!

Vegan Lemon Poppy Scones

I loved this recipe. The first time I followed it exactly and it was good. Then I messed around with it creating lots of variations including adding rawsugar and less flour with dark choclate to create "dessert" scones that I served with heated and thinned fruit preserves. This is a basic recipe to have on hand and then to play around with till you find perfect variations. Thanks for sharing!

Vegan Cheesecake

This was fantastic. I read the other reviews and followed suggestions. I used vanilla soy milk, added extra vanilla, and baked longer than required. I didn't think it was going to turn out till I let it chill in the fridge for about 4 hours. I topped it with a homemade strawberry sauce and it disappeared in about 10 minutes. Everyone loved it.

Italian Vegetable Soup

Wonderful recipe and great for adapting to whatever veggies, beans or pasta you have on hand. I have made this 4 times now, and each time I play with ingredients following the basic recipe. Every time I have gotten great respnse from a very picky family!

Lentil Rice and Veggie Bake

I am giving this recipe the 5 stars because although I tweaked it to meet my families particular tastes, we were all really happy with the end result. I am cooking for 3 non-dairy kids, 2 vegi. adults and three omnivores. And EVERYONE liked it. I followed some other reviewers advice: topped it with green onions for the last few minutes, added some extra veggies and was able to serve three generations of specialized eaters with no complaints. And that is a miracle.

Tuna Tofu Salad

This was very good idea - to use tofu instead of mayo - but the end result needed some added spice. I added pickles and some black pepper at the end.

Tofu Parmigiana

Amazing. I prefer more hearty tofu so I pressed it, sliced it and froze it overnight. I also followed everyones tip about dipping in egg/flour/breadcrumbs and baked it on a cookie sheet for about 25 minutes (turning midway through) instead of frying. Served over capellini with salad - wonderful!

Simple Baked Apples

I have never liked baked apples before and I LOVED this. Served as a side dish. We are non-dairy so I used vanilla soymilk (since other reviewers recommended adding vanilla extract I thought that would be good and it was). Also used organic black raisins, and sweet dried cranberries. Fantastic!

Chicken Florentine Casserole

Good but needed tweaking. This is a good, solid recipe but it did need some adjusting. It was just a little too soupy and cheesy for us. I made it a second time and added extra spinach and finely chopped broccoli. That worked better for us.

This was really good! Made for family potluck. I made some adjustements : used veggie ground "beef" instead of Tempeh, soy "cheese" and whole wheat tortillas. Everyone loved it!

Orange Beef-Style Tofu Stir-Fry

EXCELLENT! Made this for me and vegan friends also served to omnivores who loved this! Excellent with cocunut rice. I froze my tofu overnight and then breaded it in cornstarch before frying.

Sausage Casserole

Ok. This was an excellent recipe and I didn't even follow most the reviewer tips. I did however make it vegetarian and it still turned out great - I used frozen veggie sausages. Cottage cheese worked fine for us.
