Fish Tacos

Reviewed: Jan. 8, 2011
Grilled Mahi Mahi for 3 mins. Then covered lightly with oil, salt, lemon juice, lemon pepper seasoning, Mrs. dash grill seasoning and roasted chipotle powder. I placed Mahi Mahi in the oven at 400 in foil with lemon juice till 145 degree inside fish. For Mayo mix I made it to taste. I didnt have jalapenos so I used Tapatio to taste. I skipped the cappers. I also used lime juice in it. My husband said he would for sure like to enjoy it again.! Sorry kinda sort just trying to get it all down before I forget.

The filling was tasty. I was in a rush and tried to cheat by using ready made pie crusts, I dont recommend it. Next time I will make the crust myself.

Lamb Chops with Balsamic Reduction

Reviewed: Oct. 19, 2009
I am Armenian and I am always on the look out for recipes using lamb. I made this for the first time and it came out wonderful. I have just a couple of hints one, be sure to get a really good cut of lamb with less fat. My second hint would be to use a dutch oven, lots of sizzling going on. Enjoy!!

It was kind of tricky on the rice portion of the recipe. So I cooked the rice first then I added everything to put in the oven. Very Good recipe for winter!!!

I plan to ditch the cucumber add olives and pepperoni. I might throw in zuccini for fun since I am not a big cucumber fan.

Yummy Quiche

Reviewed: Jun. 11, 2009
I just came back from vacation where I had the chance to eat a breakfast quiche for the first time. I knew I could make it better than the bed n breakfast my husband and I had stayed at. So I went to the grocery store and purchased Pillsbury ready made crust, eggbeaters, Colby jack cheese, bell pepper, bacon, and fresh sliced mushroom. I returned home and thought “dang it how in the world do I cook this”. I knew I would find a recipe to follow on here and man did it turn out good! My Husband ate half of it in less than 30 min. Recommendations don’t use cream, why do you need cream? I didn’t use cream. I enjoyed this with sour cream and salsa, and my husband had it with ketchup. My wish is that this might help someone. Have a blessed day.

Pan Seared Red Snapper

Reviewed: Jul. 4, 2008
Yummy Red Snapper!!! I didn’t have rice vinegar so I used white vinegar. I didn’t have green onion so I used onion powder and parsley flakes for color. I also ground sea salt over each filet just to try it out. Then for fun I grilled it instead. It came out wonderful! My husband liked it and wants to use it again. I did rub the ingredients in and let sit for 30 min before we grilled the snapper.
