Slow Cooker Carolina BBQ

Glorious!!! I love this recipe, I've made it at least 5 times now and my guests always rave about it. I love it as a sandwich; pork, coleslaw, on a King's Hawaiian roll, yum! Yes it smells a little funny cooking and yes it's not quite the same as bbq from a fire but that's the beauty of it. We all have a slow cooker, no one has a fire pit. :)

Best Easy Chicken Croquettes

Good comfort food. They lived up to their name by being easy to make. We didn't have any celery so I replaced it with fresh basil, also used olive oil to cook them instead of shortening. Prevailing flavor is cream of chicken soup. If you're not a fan, you probably won't like these, if you are then bon appetite!

Sour Cream Chicken Enchiladas

We ate these three meals in a row and I don't even like leftovers! We used whole wheat tortillas and low fat sour cream to health 'em up a little. Skipped the jalepeno salsa since the salsa verde we used was already spicy. Also used 1/2 the amount of cheese and they were still great.

Spiced Pecans

Yum! These turned out great. Only problem encountered was cooking them at 350 for just 20mins they started to burn. I would lower the temp to 300 and bake for 20mins stirring every 5mins.
