Carol's Chicken Salad
As always, I made some changes. I changed the quantity to 30 to serve about 50 people at a catering event I did. (I bought croissants, cut them in half, and made a pocket to put the chicken salad -- worked great). The sauce, I did NOTHING to, it's perfect. I omitted the water chestnuts, I used shredded swiss cheese instead, and about 1/2 the grapes it called for -- perfect!

Sausage Stuffed Jalapenos
With some changes, it is def. 5 stars...I doubled this recipe to make approximately 75 peppers for a catering event I did, and it worked out well. I still only used 1 lb of the ground sausage (I used "hot"), omitted the ranch, and substituted about 1/2-1 cup of low fat sour cream, and added 1/4 C each of red and yellow bell peppers, finely chopped. Awesome recipe! -- A melon baller works wonders to take out the seeds/middle of the peppers!

Sloppy Joes II
good easy recipe. I ran out of ketchup while I was making it so I only had 1/4 cup. So, to make up for that, I used BBQ sauce instead. Also ran out of yellow mustard, so I used Dijon. It turned out very good with those modifications! I added some water to the pan while it simmered, and cut the simmer time down to about 15 minutes and it was perfect.
