Curried Red Snapper

I used scallions and shallots rather than onions. The flavor was mild. My wife liked it, and the kids who tried it did, too. However, all the kids had a bit of trouble getting past the "look" of the sauce. While I might repeat this, it didn't knock my socks off.

Creamy Au Gratin Potatoes

To be fair, it could very well be my fault that this did not turn out as well as I had hoped. I ran into a few bumps in the road, and it's likely that they may have caused the taste of the dish to suffer. Still, I'll try a different recipe the next time I decide to prepare potatoes au gratin.

Rolled Flank Steak

I used the teriyaki marinade recipe from the Teriyaki-Flank-Steak recipe and then followed this recipe's directions for making the roll. It was both delicious and eye-pleasing. TIP: Make sure you have a meat thermometer because there's no other way to correctly determine if the dish is done.

Awesome Sausage, Apple and Cranberry Stuffing

This was a big hit! I stuffed it in a 19 lb turkey, and it came out great. Things I would do again/differently: 1) Use fresh spices for more vibrant flavor; 2) Add an egg or two or three (depending upon number of servings) for a bit more body; 3) Don't add too much turkey stock... it can be overly moist (but it's still delicious!); 4) Add about 25% more apple than the recipe calls for; 5) Make sure your bread crumbs are not too soft; This one is a definite repeat!

Spinach-Green Bean Casserole

I followed the directions to the tee. The dish was bland, the texture was not pleasant, and seemed a bit dry. Perhaps I made an error, but I won't be trying this one again.
