Buffalo Chicken and Potato Salad

My family enjoyed this in wraps. For the dressing, I used equal parts low-fat mayo and blue cheese dressing. I'm sure ranch would work, if that suits your taste. We like the spicy, so I also added a little extra hot sauce. I'll definitely make this again!

Cardamom Carrots

Cardamom carrots has always been a standard side dish with Swedish meatballs in my family, but I'd never added orange to it. Yummy! In addition to the orange zest, I added the juice from half an orange. it made the dish a little more saucey instead of glazed. I also cooked the carrots in the microwave for 3 minutes and then cooked them in the sauce for about 3 or 4 more minutes.

Honey-Spice Acorn Squash

This wasn't enough to convert my kids into squash lovers, but they didn't make any faces either. DH and I liked it quite a bit. I added the zest from half of a lemon to the honey-butter sauce before baking, gave the flavors a little more brightness.

Pear and Prosciutto Pizza

My family and friends love this pizza! I've made it several times, both as written and with adjustments, and it's always yummy and impressive-looking. If you want to save time, use the chopped roasted garlic in a jar, a Boboli-type crust and don't prebake the pears. Prebaking does have the advantage of drying the pears a bit, which can keep the crust from getting soggy. I've used goat's milk mozzarella before, which adds a little more tanginess. You can also make mini-sized pizzas and slice them thinly for an appetizer plate. Thanks for upping the creativity of my supper repetoire, Bostoncook!

BBQ Pie

Family friendly and hearty. I had already browned ground beef, so I added about 1/2 cup of french-fried onions. I also topped the filling with prepared cornbread mix. My family enjoyed it. Next time I might try half ground beef and half pork sausage.

Pasta Fagioli II

My family really enjoyed this. Like some of the other reviewers, I added a second can of beans. I substituted chicken broth for the boullion and water to cut down on the salt but upped the herbs and peppers to keep the flavor. I also drained the beans before adding to make it less soupy.

Cheesy Brat Stew for the Slow Cooker

Our family really liked this, and I made it on the stovetop in about 40 mins. I peeled and cubed the potatoes and nuked them for six minutes. While they were cooking, I removed the brats from their casings and browned them with the onions. I, too, used frozen green beans instead of canned and beer instead of water. Since I didn't have a pepper, I added a few dashes of Tabasco -- just enough for zip. Brought it all to a slow bubble before I added the cheese. A yummy, family-friendly Fall supper.
