Pizza Dough II

We LOVED this! No more ordering out for pizza, especially since the dough keeps well. I used 2 c. wheat flour on our first batch, which I will reduce to 1 c. next time. Update: This recipe is now a staple in my freezer. We divide it into 6 for easy individual sized pizzas. They thaw enough to roll out in about an hour.

Light Wheat Rolls

These rolls are fabulous. I use honey and olive oil for the sugar and butter, and brush with egg white right before baking instead of butter. I make these at least once a month and keep in my freezer. Every time I try another roll, we decide these are still the best. They are a staple on our dinner table!

Easy Red Beans and Rice

Super easy to make, and flavorful (we used chicken andouille sausages) but definitely not Cajun. But we liked it in its own right, and my teenage son and husband both declared it a keeper.

Irish-Style Lamb Stew

This got 5 stars from my whole family. We loved it! I used 2 lbs. lamb, 2 lbs. red potatoes, about 7 multicolored organic carrots, 2 c. beef broth, the parsley, salt and black pepper. Eight hours on low in the slow cooker, and I served it with the Light Wheat Rolls from this website that I had frozen from last weekend. Yummy!

Crustless Spinach Quiche

This was easy to prepare and we really liked it. I used 1-1/2 c mozzarella and 1 c parmesan and added a little (maybe 1/2 c) diced ham since that is what I had on hand. Update: changed from 4 stars to 5 even though it isn't heart healthy, because we keep making it anyway and like it more each time! Every cheese combo and every twist we have tried has been great.

Cheddar Chicken Spaghetti

This is boy food. I made it as the recipe suggests except subbing whole wheat pasta and no pimientos. It is both high in fat and bland. I didn't like it but hubby and teen gobbled it up and declared it a keeper... sigh...

Slow Cooker Green Beans, Ham and Potatoes

I've been making this on my stove for years and just tried the slow cooker (7 hours on low was perfect for the green beans). I had never added chicken broth before, and it made a great dish even better! Thanks!

Rich and Delicious Banana Bread

Wonderful texture and very strong banana flavor, even with only 2 bananas. I added the 1/2 c skim milk, 1 t vanilla and 1/2 t cinnamon and used butter for shortening. Will update when I try yogurt and applesauce for shortening. Thanks for healthier twist on this treat!

Zucchini Yogurt Multigrain Muffins

These muffins rose beautifully, looked and smelled great. I cut out the white sugar and just used the honey because so many people said they were too sweet - but that gave me a result not sweet enough. Next time I will try 1/2 c brown sugar. I want more flavor from the veggies too, but this is a great base recipe that I'll have fun playing with. Mine were done perfectly after 18 minutes at 375.

Cha Cha's White Chicken Chili

This is by far the simplest and quickest chicken chili I've tried, and we loved it. I wimped out and omitted the jalapenos on the first try, but they'll be in there next time. (Along with dry beans instead of canned if I plan ahead.) We also left out the cheese, which made this a very low fat and high protein dish. Thanks!

Beth's Spicy Oatmeal Raisin Cookies

So chewy and yummy! I used all butter, doubled the cinnamon, and added 1/4 t nutmeg and ginger. I also made them smaller so I had 72 little cookies, done to chewy at 8 minutes. I'm not even trying any other recipes, I can't imagine them being any better!

Spicy Slow Cooker Black Bean Soup

I love the flavor here and I'll be using this recipe (with changes) a lot. As is, this is ridiculously watery, but since practically everyone else has mentioned that, I feel kinda silly for not reducing the liquid to 4 c on the first try. I did mash up the beans by hand a bit at the end. Anyone who thinks this is lacking flavor might want to check the freshness of their spices or quality of their chicken stock.

Quinoa and Black Beans

Simple, healthy, adaptable, yay! This was a little bland for our tastes, so I'll be kicking up the spices a notch but I'll definitely make it again. I doubled the recipe except for the black beans and added a bell pepper, and it would have served at least 6 as a main dish. (We wanted the leftovers for lunches.) It was ok cold too. Btw the bulk grains section of our groceries here are starting to carry quinoa for $3.39/lb. Ask your grocer to carry it, I was told it was up to $8.99 at health food stores.

Extra Easy Hummus

I had no idea that hummus could be so simple and inexpensive to make. This was awesome and will be a regular at my house from now on. I added a little lemon juice, decreased the cumin and increased the garlic to my tastes, and made it in a cheap old blender since I do not own a food processor. I thought the taste and texture were both fabulous.

Tofu Stroganoff

We all rated this a 4, good but not great. I made the following changes: only 1 pkg tofu (which still fed 4), whole wheat noodles, lowfat ricotta for cottage cheese, nonfat yougurt for sour cream, and only 1 T soy sauce. It was simple to make but the tofu took longer to brown than I expected - start it a few minutes BEFORE you put the water on to boil for the noodles. My noodles were done way before the rest of the dish.

Pizza Dough III

The kids loved this one. I usually use Pizza Dough II from this site because it freezes well and has wheat flour, but this one was incredibly simple and quick with no kneading and only one rise. We rolled it out onto a cookie sheet and it came out great without pre-baking the crust. I used about 1/2 c more flour than the recipe called for.
