Healthy Garden Salad

I probably would only give this 4 stars on taste alone, but it gets the 5th one for being both super healthy and super easy to prepare. I think the lime was too dominant though - next time I may reduce it or add a little more sugar. Still, a double batch was gobbled up at a cookout. Thanks for the recipe!

Greek Pasta Salad I

I left out the basil (allergies) and the pepperoni (to lower the fat) and only had a few hours to marinate it, and it still went over very well at a cookout. I also doubled the garlic (minced) and topped it with shredded parmesan. I used sliced portabellas and whole wheat penne pasta too, which gave the dish a nice earthy look. Definitely a keeper.

Cheesy Ham and Asparagus Bake

We really liked this. I halved it and made it in a pie pan since there were only two of us. I used ricotta instead of parmesan, mixed most of the cheddar into the eggs, and fresh asparagus that I boiled for 3 minutes first. Baked at 425 for 20 minutes then 350 for another 5 min after adding more cheddar on top. I highly recommend the ricotta, it gave it a very creamy texture.

Quinoa Salad with Dried Fruit and Nuts

Wow, yummy! This is the best dish I have made yet with quinoa. I reduced the quinoa to 1 c. (in 2 c. chicken stock instead of water), used balsamic vinegar instead of white, 1 c. dried cranberries instead of raisins, tobasco instead of cayenne, and added about 1/2 tsp garlic powder. I also toasted the pecans before adding them. This was fabulous - definitely a keeper.

Spanish-Style Quinoa

This would get 5 stars from me if the liquid was adjusted to 2 cups so it wasn't so soggy. Still, we ate it all and my teen son even went back for seconds.

Easiest Peanut Butter Fudge

I had no faith whatsoever in my ability to make fudge, but this turned out perfect! I used the 1-2-3 cup changes suggested by other reviews. And in my grocery, powdered sugar and confectioner's sugar are completely identical food items. Don't spend the extra 50 cents for a name brand. No need. Thanks for posting this awesome easy recipe!

Cinnamon Swirl Bundt Coffee Cake

I like this recipe better every time I try it. I double the cinnamon filling (1/2 brown sugar and 1/2 white), and also add 2/3 c. buttermilk to the batter because it's too thick to pour, and bake at 350 for 45 min. I also put the chopped walnuts into the filling, not the batter, and add a confectioner's sugar glaze. It's becoming one of our favorites since I always have these ingredients on hand. I still think the original directions are funky - always cream the butter and sugar together then add eggs one at a time.

Zucchini Casserole I

I was skeptical when this went in the oven, because it doesn't really look like a casserole, but I took it to a pot luck and it was a big hit. I used 1/3 c. olive oil, italian breadcrumbs, and both yellow squash and zucchini. I also sprinkled more cheddar on the top for the last 10 minutes of baking. People gobbled it up and several asked for the recipe.

Rice, Asparagus and Cucumber Salad

Wonderful flavor and textures. Several people at the cookout I took it to asked for the recipe. I forgot to get green onions and only added the dry mustard, and used balsamic vinegar, and it was still fabulous.

Asparagus Crab Au Gratin

This was yummy with fresh asparagus that I microwaved in water for 4 minutes. We doubled the crab and cheese, and omitted the bread crumbs for a low carb dinner, but it still didn't make a quite filling meal. I'll definitely make it again, but probably for a buffet rather than an entree.

Garlic Chicken Kabobs

Very yummy! We don't have access to a grill right now, so I broiled the kabobs. Also had to use dried cilantro, since I couldn't locate any fresh. I served then with steamed asparagus and brown rice, and my husband commented that it had the flavor of something you'd get at a fine restaurant. I may up my rating to 5 stars if I like it better with fresh cilantro and a real grill. Also the dipping sauce was way more than we needed, may halve the yogurt next time.

Asparagus and Tomato Salad with Yogurt-Cheese Dressing

I was so sure that I'd love this dish because I like all of its ingredients. But I ended up feeling sad that I used some of the best fresh asparagus of the spring for this disappointing result. I can't even offer any ideas for improvement - the flavors just did not work well together for me.

Nita's Lamb, Green Beans and Tomatoes

We wanted to give this one ten stars! I used 2 cans of tomatoes and a can of beef stock instead of water, which gave it almost a stew consistency. I had mine over brown rice, but hubby and son ladeled it into bowls with the Light Wheat Rolls from this site. Fresh mint (out of the yard, since we had it) was the key. Thanks for sharing this one!

Breadsticks with Parmesan Butter

I made a half batch and coated some with olive oil and garlic powder before baking. Those were better than the plain ones. These were a lighter, fluffier, sweeter breadstick than I wanted. Still, they were ok and I was pleased with how easy the recipe was.

Baked Slow Cooker Chicken

This is the easiest chicken recipe I have ever made! I used potatoes instead of the tin foil balls, sprinkled the chicken with "Montreal Chicken" spice, and tossed in some baby carrots. Eight hours on low. The chicken was moist and tender and the house smelled wonderful!

Pizza Dough III

The kids loved this one. I usually use Pizza Dough II from this site because it freezes well and has wheat flour, but this one was incredibly simple and quick with no kneading and only one rise. We rolled it out onto a cookie sheet and it came out great without pre-baking the crust. I used about 1/2 c more flour than the recipe called for.
