Baked Oatmeal II

Can i give this 6 stars? Excellent breakfast! My teen son has never been enthusiastic about oatmeal, but this recipe won him over. We've tried it as written, with no fruit, with blueberries, strawberries, and apples & walniuts. Usually I substitute applesauce for the butter to eliminate the fat and reduce cost. The blueberry version (fresh & frozen both work great) has emerged as our favorite.

Extra-Easy Spinach Lasagna

This really is the easiest lasagna recipe ever. I added a package of silken tofu to the ricotta to increase the protein since we are eating vegetarian. I also used 9 noodles and increased the bake time by about 10 minutes. My cheese wasn't browning, so I put the broiler on low for the last few minutes. We really liked it, and my son didn't know the tofu was in it until I told him.

Unsloppy Joes

This was good, but way more like a veggie chili than a sloppy joe. I loved how inexpensive it was. I already had the spices, onion and celery, bought everything else and some nice big wheat rolls for around $8.00. It also went well in a wheat pita for smaller portions. Also it was just as good as a leftover.

Baked Spaghetti Squash Lasagna Style

Yum! Two thumbs up from me and my teen. I cheated with jarred spaghetti sauce, so this was very easy to make. I bought the smallest squash I could find, and it still took 50 minutes to bake. Looked beautiful in the shell, great dish for company. Next time I think I will use a baking dish just so I have room to add more veggies. A keeper for sure!

The Best Vegetarian Chili in the World

I cut this down a bit and we will still get 2 meals out of it (for 2 people). Used 1 pkg burger crumbles, 2 cans tomatoes, and only 1 each of jalapenos and can of green chiles. Also cut down the chili powder to 2 tbsp, and it was still nearly too hot for me (but just right for teen who likes hot foods). I also added diced zucchini, which worked very well with the other flavors. My total cost including a loaf of French bread was $18.50 since I already had the spices. Excellent food, good value for 2 meals. Thanks for posting this! .

Robin's Quinoa with Mushrooms and Spinach

Holy cow-free dinner. This recipe exceeded my expectations. Very very yummy. I left out the wine, followed the rest of the recipe pretty faithfully. There was plenty of liquid without the wine, too. I don't like quinoa too squishy, so I keep liquids about 2 c. to each c. quinoa. I saved a little to try it cold later. If it's yummy cold too, this will be my new favorite quinoa recipe. Ham and Cheese Puffs

I left out the onion, and these were a big hit at an appetizer-only party. I thought they were much better fresh out of the oven than later when they cooled down. They did strike me as "kid food," but everyone seemed to like them.

Balsamic Bruschetta

I used oregano instead of basil because of food sensitivities, and this was still excellent. Everyone who tried it liked it. Also, easy to make and looked elegant on the table. Thanks for posting!

Cranberry Dip

Artichoke Nibbles

This was a hit at Christmas last year so I'm making it again. This recipe also got passed around at Superbowl parties. I scaled it down to an 8" square pan for a small gathering, and it was well received.

Hot Spiced Cider

Used a crock pot and borrowed another reviewer's suggestion to bundle the spices in a coffee filter secured with a rubberband. It was delicious, definitely the recipe I'll be using from now on!

BBQ Pork for Sandwiches

So easy, so yummy, thanks for this recipe! I used a 4 lb pork butt (9 hours on low) and it fed me and a teenager for 3 meals (12 sandwiches).

Lemon Blueberry Bread

Loved it!! Left out the walnuts and lemon zest, dredged the blueberries in flour (they didn't sink), made 3 mini-loaves baked at 350 for 45 minutes. Also used 1/2 c. powdered sugar for the glaze. Very yummy, but you have to be a fan of lemon tartness to enjoy this.

To Die For Blueberry Muffins

These were yummy. I didn't get a good crown on them though; they were flat on the top. And I did as little mixing as I could. So they didn't look all that great, but it didn't stop us from eating them all in one day!
