Strawberry Whipped Sensation

Very good summer dessert! I needed another recipe to use up strawberries we picked. This is a keeper. I was pressed for time and wasn't really using this for company (just for the kids), so I pressed whole oreos into the top instead of crushed. I also just sliced the dessert and put a dollup of cool whip on top instead of frosting the entire thing.

Green Tomato Pie II

I would not recommend this pie. I am like most and wanted some creative recipe for my green tomatoes and found this recipe. I followed the recipe exactly and added 1 tbsp of cornstarch to prevent watery pie. The taste is extremely odd and is not like apple pie at all. I will put my green tomatoes to use in a relish or some other fashion instead of this pie. I am sad I wasted a good pie crust on it.

Rich and Creamy Tomato Basil Soup

I am a huge fan of Panera Bread's tomato soup so I was looking for a similar recipe. This is not exact, but very close. It has the same creaminess to it and has a restaurant quality. I did not peel my tomatoes and they blended up nicely. I would recommend the seeding part. This was a hit with my kids...served it with mozzerella sticks...a huge hit!

Chocolate Chip Banana Muffins

These muffins are terrific. I have made them by following the recipe and have made alterations and they always turn out great. One change I have made that I like is I use peanut butter chips instead of chocolate chips. Something about the peanut butter/banana combo is really good and my kids dig them. I also grind my own wheat for wheat flour and use whole wheat flour in the recipe, doesn't change them at all. I just made them today using whole wheat flour, splenda and only 1/4 cup of oil (increased the yogurt a bit) and they are very appealing. My kids didn't even notice the Splenda, but with PB chips, it is still very sweet.
