Fabulous Wet Burritos
I made these last weekend and they were a hit! I read many of the reviews and made only slight changes to the recipe based on others advice. I substituted on can of rotel for the tomato soup. I also used freshly roasted green chilies (the canned ones have no flavor and are a waste of my opinion). I also baked in a 9x13 pan as suggested by others. Served with choice of toppings...homemade guacamole, sour cream, black olives, lettuce and tomatoes. Added a nice yellow rice as a side dish. Great dinner and will be making again.

Roasted Lemon Herb Chicken
My new favorite roast chicken recipe. I'll be making this one again. For the most part, I followed the recipe exactly. As others suggested, I did rub spices under the skin...also added about 1/2 tsp of kosher salt to the spice mixture. I stuffed the cavity of the chicken with a lemon, cut into quarters, and 4 smashed garlic cloves. I served with "orzo and kale" recipe from this site, along with a whole grain baguette....and a nice bottle of wine. Wonderfully, simple....and makes the house smell great!

Whole Grain Healthy Banana Bread
I don't normally write reviews, but am very impressed with this recipe. DH & I have made gret strides in making better food choices. Low-fat, low-suger, whole grains etc. I've really been missing baked goods. It seems that so many of the healthy recipes just don't cut it for me. Gummy, lacking in flavor. I'd rather go without than have a mediocre banana bread. This recipe surprise me. It's good! It's really, really good! I will be making again. I used Splenda brown sugar and added cinnamon & nutmeg per other reveiwers suggestion. I used 4 bananas (cause that is what I had on hand) and 1/2 cup unsweetened apple sauce. Other than those changes, I followed the recipe. The bread is moist and tastes like a banana bread should! Even skeptical DH took two slices to eat during his commute this morning.
