Southern Potato Salad

Loved it warm! Used chopped dill pickles instead of sweet, and added 1 T dill pickle juice for kick.

Ham with Pineapple Sauce

I used a spiral cut ham. Before the last 30 minutes of heating I separated the slices and poured the thickened sauce between each slice. Lots of raves!

Healing Cabbage Soup

I added cannelloni beans, green beans, 1/2 tsp of hot sauce and 1/2 cup of freshly grated Parmesan cheese to really top this off nicely.

Apple-Cinnamon French Toast Casserole

I put the toasted cinnamon bread soaked in egg/milk mixture on the bottom and spread the apple/butter/brown sugar mixture on top. Left out the raisins. Baked it for 40 minutes covered and 10 minutes uncovered. Sprinkled with powdered sugar to finish...perfection!

Oatmeal Chocolate Chip Muffins

They were easy to make, but not edible. I did not add the vanilla, but added more chocolate chips. Didn't matter, they tasted over-salted and under-sugared. Sad waste of time and ingredients.

Sauteed Apples

Key Lime Pie VII

I used bottled Key Lime juice and it turned out delicious! We've lived in Florida for 30 years and tried dozens of variations, but this is the best by far. So easy too. The little "bubbles" never happened for me, so I took it out after 15 minutes. The consistency was perfect! I made it as a surprise for our daughter's birthday. She had a store-bought Key Lime pie, but when we walked in with the homemade version, she was thrilled. She said it was the best homemade she'd ever had as well.

Apple Enchilada Dessert

I have made this dessert several times, always receiving raves for it. I have used fresh apples and canned, but prefer to use fresh Granny Smith's. This is a perfect ending for "Whit's Enchiladas" and Mexican rice.

Almond Wild Rice

Used brown and wild rice and golden raisins. It did not wow anyone in the family,or guest but they ate it. No one asked for seconds. Served it with salmon. I enjoyed the nice change from potatoes.

Old-Fashioned Strawberry Shortcake

I didn't have cream, so substituted sour cream. It turned out just like my mother used to make. My husband usually prefers the spongy type shortcakes, but he enjoyed this equally.

Mexican Rice II

I wasn't sure how long to cook the rice,so I let it cook in the preheated oil while I chopped the onion. By then,the rice started to turn a golden color. It took another 5 minutes to cook the onions until tender. The result was perfection! Never tasted better Mexican rice anywhere!

Whit's Chicken Enchiladas

I used this recipes with turkey leftovers. I didn't have any jalapeno peppers so I added red pepper flakes instead. And I recycled the 1/2 cup drained water from the canned chilies and used in place of 1/2 cup water to spice it up a bit. Our guests raved about this dish! I highly recommend this for Mexican food lovers.
