Juicy Roasted Chicken

Prepared as written. I cook all roasted meats on a cookie sheet lined with foil. Easy clean up and the air seems to circulate better cooking the meat more evenly. I placed chopped carrots, onions, potatoes and garlic gloves on the cookie sheet and cooked with the chicken. When the meat and veggies were roasted I took the pan drippings in a sauce pan and added 3/4c of water mixed with 1 tbsp of flour and 1 tsp of salt to make the gravy. This was awesome - very tasty! Thank you.

Chicken and Red Bean Enchiladas

HOW TO DO THIS IN 30 MINUTES.....Thank you for saving me tonight. Rotisserie chicken is my "back-up" but I've had to use my "back-up" way to much lately that is why I was so happy to find this recipe. I had to alter it so it was ready in 30 minutes flat and it was still outstanding. Here is what I did...I pulled half the meat from the bone and put in the bowl with the cheese and a can of chili style pinto and red kidney beans. Mixed it up. I opened a can of tomato sauce and a can of mushroom soup mixed them together. I spread 1/3 of the mixture in the bottom of the pan, 1/3 into the filling and 1/3 I used later on the top. I was sure we'd miss the onion so I cut some green onion and sprinkled on top once the enchiladas were assembled. That took maybe 10 minutes and they were cooked in 20. WOW.....the kids loved it, my husband loved it and there is still some left for lunch tomorrow plus I still have half the meat from the chicken to make something with tomorrow night. I'm thinking something Thai...maybe I'll try My Thai Chicken Wraps from this site.

Corn Dogs

We made this for date night as something fun to do for the kids. What alot of fun and they turned out great. I'm not a carnival food person at all but I have to say when you can make food this fun why not. I was pleasantly surprised. If you are wondering if you should try it or not go for it! You'll make great memories and then me able to say you've made Corn Dogs with success. Just follow as printed.

To Die For Blueberry Muffins

I've made this every week for a month. My family loves them. I use buttermilk instead of the milk and frozen berries. I've stopped making the topping. They are just as good without and less fattening. I just sprinkle cinnamon on top. This has saved me a fortune on muffins from the dounut shop. Thanks.

Strawberry Oatmeal Breakfast Smoothie

What a life saver. This is a great after school snack. My kids don't asks for more food till dinner time. They are all filled up and the oatmeal makes it last with them. We add frozen banana, 1% milk (if I have no soy) and 1 large Tbsp of peanut butter. Thanks for such a great healthy meal in a cup.

Tina's Fruit Dip

Very good dip with ingredients you always have on hand. I added crushed walnuts which was nice with pineapple. Serve chilled. Second day mixed with whipped cream as banana pancake topping. Yummmmy.

Roquefort Pear Salad

WOW! I've made this a few times now and I wanted to share the success. For the pecans I add to the sugar 1/4 tsp of cinnamon and 1/8 tsp of cayenne and when they are almost done caramelizing a splash of vanilla. They have more depth with the spice. I have found Ya or Asian pears have a more apple like texture and will travel better then other varieties if you are taking this to a dinner party (which I promise will make you a hero). Everything else is perfect as is. Thanks Michelle

Quinoa Tabbouleh

This is my first review. I feel that I owe it to the site to write one or two reviews since I use these recipes everyday. This is a wonderful recipe and I have made it with quinoa, white rice and brown rice. It turned out great all three ways. When I make it for company they ask what is the dressing and are always suprised to find out that olive oil, lemon juice, salt and I add garlic (1 clove grated). Thanks for such a great healthy recipe to use such an unique grain.
