Burrito Pie

This pleasantly surprises me every time I make this! Very easy and very good! I usually use salsa instead of taco sauce.

OMG these were awesome! I did some changes when I made them the second time around. I had a lemon that I had to use up so I squeezed the juice in before adding the milk. YUM!! I also think half of the topping was more than sufficient! :)

Gourmet Chicken Pizza

WOW! That was great pizza!! I've made this twice now. First time I made it with a homemade crust and half fresh tomatoes half canned and it was divine!! Next time I used a refrigerated pizza crust and all canned tomatoes. It was good, but not AS good, of course. Watch out when you're using canned crust. I didn't check it until 25 min and it was WAY overcooked. (And my oven usually takes longer to cook things)

Fiesta Chicken and Black Bean Enchiladas

These were great! I used green pepper (because it needed to be used) Dried Cilantro, omitted the chilies (didn't have any) and also omitted the Tabasco (for the sake of my 3 y/o.) I can only imagine it would be even better without the changes I made! I also used the whole can of enchilada sauce. I'm thinking it might have been a little too dry for my taste otherwise. Plus I didn't have to figure out what to do with 1/3 of a can of enchilada sauce! :D

Peanut Beef Stir-Fry

Do NOT use Smart Balance peanut butter for this dish! (or anything else for that matter) I ended up rinsing the sauce off of the beef/veggies and making a new batch with a crunchy generic brand. It turned out wonderfully! I really enjoyed the little chunks of peanuts. I added carrots and Broccoli, I'll add even more next time! I love veggies! And this way we didn't need a side dish. ;)

Cajun Pasta Fresca

This was just alright. I had tasted it before I added the cheeses and Cajun and saved a little bit because it tasted AMAZING! I wish I would have stopped there. I didn't like the Parmesan, the Cajun seasoning was overpowering (and I didn't add the whole Tablespoon) and the mozzarella sort of hardened up around my fork and on the bottom of the bowl, that weirded me out. I also used half the amount of pasta and it was still quite a bit!

Beef Tips and Noodles

Chicken Noodle Casserole

Cherry Snowballs

These cookies are so cute! I put the oats in the food processor and ground. It turned out great! I also found it much easier and CLEANER to put the cookie on a fork, spoon the icing over them and sprinkle the coconut on. Otherwise my coconut was just getting ugly and gloopy. I put a chocolate chip inside the cherry on half of them and WOW! Great combo!

This is SO GOOD! Every time I make it, all are impressed :) I usually use about half as much cheese, I've tried with just Cheddar and it was still great. I've also used regular prepared mustard and it worked well. Thank You so much for sharing this recipe!

Grandmas Cowboy Cookies

These are Great! I've only used regular chocolate chips since that's all I've had. But I think they would be even better with mini chips. I usually add more flour and lengthen the cooking time as a personal preference.

Todd's Famous Blueberry Pancakes

Wow, these were GREAT! I didn't wait an hour before making these and they still turned out wonderful! I used fresh blueberries and cornola oil instead of butter. I also added some wheat germs for extra nutrition. I will make these again!!

Apple Pie by Grandma Ople

I followed the recipe and it just didn't turn out for me :( The filling was watery, the crust was hard and burning. The apples weren't cooked. And it completely fell apart when i tried to cut it. I had cut up 7 granny smith apples, and i crammed just over half of them into the pie. There was no way any more would fit! Maybe that's why it was so watery and uncooked inside. I'm an apple pie novice, so maybe that's why it didn't work. I may try to make this in the future since so many others had luck with it.

Root Beer Float Cake II

I made this for my brother's birthday and he said this is now his Favorite cake! :D I bought root beer extract and FORGOT to put it in!! :) It was still great, but next time I am going to add it in because it was a subtle taste.

Kung Pao Chicken

This was easy and very good! I omitted the peanuts (only because I didn't have any) and substituted the chili paste with chili sauce. Served over whole wheat spaghetti noodles. It was awesome!!

Tyler's Raspberry Thumbprints with White Chocolate Glaze

I initially made these to add to my baked-good gifts. But My husband and I ended up eating almost half of them before I got them out!! They are SO good! I intend making more and doubling the recipe to ensure some make it into the cookie tins this time!! :)

Banana Nut Brownies

The first time I made these they were so wet and messy i threw them away! But they sound SO~~ Good that I had to give them another shot! This time I upped the cooking time and measured the banana out exactly. I also substituted chocolate chips for the nut (Per my husband's request) and used three heaping TBLS of cocoa and they turned out perfect. OF COURSE THEY HAVE A BANANA FLAVOR! They're "Banana Nut Brownies" if they were "raspberry brownies" you'd expect a raspberry flavor wouldn't you? These are really great, gooey, chocolatey, brownies with a nice banana flavor!
