Jalapeno Cream Cheese Chicken Enchiladas

Reviewed: Nov. 13, 2011
I made two minor changes. I used one jalapeno (I like medium level of spice) and I cooked the chicken in a slow Cooker (my favorite method when I need to shred chicken). Very tasty; this will be added to the finner menu rotation.

Apple and Brown Sugar Corned Beef

Reviewed: Apr. 18, 2011
This recipe was okay, but not as good as everyone else raved about it. The flavor of the apple is only tasted in the outside edge of the beef. And in the potatoes. It was tender, but any liquid in the slow cooker would do that. I wouldn't spend the money to buy apple juice (which I don't usually have on hand) to make this again.

Stroganoff Soup

Reviewed: Apr. 13, 2011
I did alter the recipe, but primarily the cooking method. I cooked the beef in the slow cooker all day, then added all the ingredients on the stovetop. I used fewer noodles and had to add more water (could be due to stovetop cooking). I added more steak sauce (1 TBSP) because I enjoy the taste of it. I would also recommend using small noodles; I used wide and they were hard to get on the spoon. :-)

Cool 'n Easy® Pie

Reviewed: Dec. 13, 2009
I have made this as a pie and also as indivudual mini pies using raspberry Jell-o. I used a mini muffin tin lined wiwth paper cups. I made a graham cracker crust, added about 1.5 tablespoons per pie, and packed the crust using a Pampered Chef tool. I baked at 375 for about four minutes. Prepare the pie as directed. Once the mini pies are filled, I placed a raspberry in the middle of each one. Once the pies were set, I drizzled them with melted milk chocolate. They were a great mini dessert and a huge hit. The dessert is very light, making it great after a heavy meal. Also very refreshing.

Brunch Enchiladas

Reviewed: May 3, 2009
I found this dish to be extremely dry and very un-flavorful. I will not make this again or even bother trying to "fix" the recipe!

Creme Brulee French Toast

Reviewed: Mar. 27, 2009
This is really a nice recipe. My husband even enjoys this dish! The only alteration I make is to use more slices of bread; six slices doesn't cover the dish so I use enough to cover the bottom.

Everyone at work enjoyed this. I made it with extra butter with great results. Have the whipped cream ready to serve with this one!

Strawberry Pretzel Salad

Reviewed: Mar. 22, 2009
Yummy! Use all the butter it indicates in the recipe-you'll have a much richer taste. I've also made this with frozen raspberries and raspberry Jell-o and it was delicious!

Divine Casserole

Reviewed: Mar. 22, 2009
I alter this recipe from the original when I make it. I use stew meat and cook it in the slow cooker all day. I don't use the tomato base. I make a packet of brown gravy mix instead. The noodle part is super yummy as is!

Jalapeno Popper Spread

Reviewed: Mar. 22, 2009
This is delicious, but I added more jalapenos than what the recipe stated. I think I ended up with about 5 ounces total. I used sliced jalapenos from a jar and processed them in a food processor. And please note this recipe doesn't re-heat pretty the next day. The mayo components will separate out. It still tastes delicious but it does not look pretty!

Tammy's Philly Cheese Steak Dip

Reviewed: Feb. 25, 2009
This is very delicious. I made it for a potluck at work (since co workers are always willing to be guinea pigs). I made it in a small crock pot. By the end of the potluck only a small dollop of dip was left. I served it with French bread and ended up making a sandwich out of it. Yummy! I will be adding this to my list of favorite recipes! I would recommend if you're feeding a large crowd to double the recipe.
