Disappearing Marshmallow Brownies

INSANE! These are amazing. Soft and chewy and buttery and awesome. I lined my pan with foil, and then sprayed the foil really well because they're very sticky. Once they were cool, I pulled the foil out and used a pizza cutter to slice them, way easier. Make small pieces, they are VERY rich.

Eggs and Spaghetti

This was great! I added salt and black pepper, and poured all the butter in with the eggs and pasta (duh, butter + pasta = awesome) and it was great. My 2 year old ate as much as I did!

Lemon Fiesta Cake

I wanted to like this cake. It's easy and pretty.. but not very lemony and not very sweet. I left out the raisins and added blueberries - the blueberries were fresh and ripe and very sweet, but still the cake needed more. The glaze is AWESOME. I glazed the cake whole and the parts that slurped up the glaze are yummy. I plan on making a 2nd batch of glaze and glazing each slice to make it better.

Homemade Black Bean Veggie Burgers

These are great! I followed some reviews and put everything in the food processor. I didn't have a bell pepper and hate cooked bell pepper anyway, so I used a carrot. I used oats instead of bread crumbs to make them even more healthy. I rinsed the black beans but should have let them drain longer - they were a bit wet so my mixture was runny. I treated them like pancakes, poured the "batter" into a hot pan w/ a little oil then fried them up. I got 8 thin patties from 1 can of beans, my toddler LOVED them, was shoving them in her face w/ two hands. Great lunch for us girls during the week - my guys won't touch them with a 10 foot pole.

Penne with Chicken and Pesto

I left out the chicken, served a garlic breaded chicken on the side instead - this made an AWESOME side for the chicken. It was very rich, and a little went a long way - we'll have lots of leftovers and that's a good thing! I'm stuffed and I can't wait to digest so I can eat more. Maybe I need therapy? Regardless, this is AWESOME.

Vinegar Cookies

OMG. Seriously, best cookie ever. I rolled them into little balls, then rolled the balls in cinnamon sugar to make snickerdoodles. I love a good, buttery, CRISPY cookie, and these are OUTSTANDING. In fact, I told my boyfriend who swears he's NEVER getting married that after he eats one of these cookies, we're going to talk about it again, cuz I think these are going to change his views on the universe. These cookies are proof of good in the world.

Black Bottom Cupcakes I

Meh. The cream cheese part is yummy, but the cake itself is blah. I even followed other's advice and replaced the water with coffee, still blah. I've had way better black bottom cupcakes. These are very pretty, though, so they get a 3.

Brown Sugar Meatloaf

The only reason this got even gets three stars is because my 6 year old liked it. I added soy sauce and garlic to offset the sugary sweetness. The meatloaf itself was incredibly bland. My kid ate the top w/ the sauce and then smothered the rest of the meat w/ ranch dressing. With my changes, the topping was pretty good, I just wish there was some on every bite. All in all, this recipe was a failure. I might try the topping again on a more flavorful meatloaf

Rice Balls a la Tim

These were surprisingly good!! I added a little extra seasoning, per the other reviews, and a little hot sauce cuz that's how I roll. When I went to roll the mixture into balls, I tasted it (I actually had a bowl full of the mixture for lunch) and added what seasoning I thought it needed. It was way too hot for me to roll, and very squishy, so I stuck it in the fridge for an hour. After that, rolling it was a BREEZE. I put the rolled balls in the fridge till closer to supper, then rolled in and egg wash (egg and water) and then plain breadcrumbs I seasoned up and mixed w/ a little oil. I baked them and then sauced them as I served them. (2 balls on the plate, then a spoonful of sauce) That way the leftovers weren't all saucy. To reheat, I nuked a couple balls for 3 minutes, then put in the toaster oven on the LIGHT cycle. Nuked a little sauce and drizzled over. Perfectly crispy! That was my breakfast this morning. These would be a GREAT place to hide veggies for picky kids. Next time I might do half beef and half italian sausage and call them pizza balls.

Microwave Lemon Curd

I made this, cut down to 5 servings, and it was AWESOME. I didn't need it, just wanted to see if it would work, for future reference (hehehe) and so I ate some with a spoon (awesome) and stirred the rest into homemade lemon pudding. AWESOME.

Waffles I

Perfect perfect perfect! Really great! I loved these - didn't have vanilla (how does that even happen??) so I added a tsp of cinnamon to the batter, REALLY great. I did add 1/4 cup sugar instead of the 1 tbsp, because my kids eat them w/o syrup (too messy) but the texture was PERFECT.

Quick and Easy Fish Tacos

Giving this 5 stars for the brilliant idea. Used flour tortillas cuz that's what I had, and used Amy's Cilantro Cream sauce from this site isntead of the tartar. Added red onions, cuz we likie. So FREAKING GOOD and easy. My kids both ate the snot out of them w/ ranch instead of the sauce. Brilliant.

Skillet Balsamic Chicken

Excellent! I doubled the sauce but used 1/2 vinegar and half homemade broth in place of 2x the vinegar. I boiled some pasta and added some frozen veggies to the water, then poured the cooked chicken and sauce over the drained pasta/veggies and made a quick and dirty skillet meal. It was really good and both my kids ate it, which surprised me. I would make this again for company but keep the breasts whole for prettier presentation.

Absolute Best Pancake Syrup

This is GREAT. Oddly, I hate maple anything so this is a great alternative! It was delicious, and my 6 year old said it was the best ever. My 1 year old got more IN her than ON her, always a sign that a recipe is a success (they both still needed baths after but that's how we roll with pancakes) SOOO glad for the advice to use a giant pot... would have made a huge mess if I hadn't read that! Update - made this for my honey and he said we're never buying syrup again. THAT is a good syrup. I halfed the butter (financial reasons, not health) and it's STILL good.

Pudding from Scratch

I've made this about 8 times now... I've done different flavors and had great success. Used brown sugar instead of white for a butterscotchy flavor, added lemon extract and zest for lemon pudding, and added chocolate chips for choccy pudding. Tonight I made choccy and put it in a baked pie crust and topped with whipped cream... 3 adults and 2 kids finished it off in 1 sitting.

Italian Dinner Rolls

HUGE hit. I left out the cheese because we were having a very cheesy meal. I topped the rolls with sea salt and butter and they were beautiful AND yummy. I almost NEVER follow a recipe for bread, but this one I followed to the letter and it was perfect. I was told "save this recipe!"

Easy Sausage Cheese Balls

Used the baking mix recipe from this site, which I whizzed up in my food processor. Since the whizzer was already in use, I just threw the sausage in with the baking mix and whizzed it. I left out the cheese because we didn't have any - added an egg to make up for it. They came out PERFECTLY. I expected a ton of grease on the pan, and there was none. My kids LOVED them - my son loved his dipped in ranch and I really liked them dipped in melted raspberry jam. My 1 year old just liked them and walked around eating them all day.

Old Fashioned Pineapple Upside-Down Cake

Seriously one of the best cakes I've ever made. I'm 8 months pregnant and HAD TO HAVE A PINEAPPLE UPSIDE DOWN CAKE. I loved making it in my skillet, really made the top/bottom tasty. The cake itself is DELICIOUS, and then when you add the brown sugar/butter/fruit topping it's insane. I did add a few splashes of reserved pineapple juice to the cake batter, due to other reviews. It gave the cake a great flavor! The cake itself was kind of a PITA to make, took two mixers at once, but totally TOTALLY worth it.
