Giblet Gravy I

This was great, the only thing I did different was added 2 buillion chicken cubes to richen the flavor, and added chicken livers for the stock. My husband absolutely dispises the giblets so I strained it out for him. He loved the flavor of the gravy though.

Excellent! Whomever said it was bland obviously didn't follow directions! I had two big plate fulls! Be careful not to overcook the scallops as I did.

Charline's Sweet Potato Casserole

I thought this was great. The directions are not great though; it does not state to cook the potatos first before mashing. I assumed I was suppose to, but it then stated to cook until "tender". Well this made no sense. You can't mash raw potatos so I cubed them and cooked them. They had to cook much longer than 20 min for it to "set". In the end it turned out great, loved the topping also.

American Lasagna

This was good. I doubled the sauce and cheese mixture and used 2lbs of ground beef. I only needed 9 noodles. I don't think there is any need to lay noodles on the very bottom, and don't lay them on very top, they will be hard. Start and end with beef mixture. Then cover with a light layer of mozerella.

Grandma's Green Bean Casserole

This is my second time making this. If you cut the sour cream back some, this recipe is great. My step-dad almost ate the ENTIRE casserole dish! Since I was short on time, I didn't use onions, but instead mixed in the fried onions into the green beans mixture. LOVED IT!

Buffalo Chicken Dip

This was a HUGE hit at a party. Everybody wanted to know what was in it and I had to write the recipe down 3 times! Thank goodness it was easy to make and easy to remember the recipe. HOWEVER, OMIT THE CHEDDER!!!! This only makes this dish look unappetizing (greasy) and does nothing for the flavor. Trust me, I tried it both ways. Tastes and looks better without it. I used two extra cans of Tyson's chucky chicken and added more of Frank's hot sauce.

Holiday Dressing

This is by far the best dressing ever. I was cooking for 20 people so I used 18 oz. of cornbread mix without changing the other ingredients. It turned out awesome. I omitted the bell pepper though, since I'm not a big fan of it.

Savory Garlic Marinated Steaks

This is an awesome marinade. The first time it turned out perfect. The second time I only left it in the marinade for one night and it just wasn't enough. I know now to keep it in the marinade for at least two nights.

Burrito Pie

I served this for my husband and his guest one night. I was told that this was the best thing they had ever put in their mouths!!! When layering, I used 2 tortilla shells instead of one. I also left out the olives since my husband doens't like them. I don't like refried beans, so I didn't eat it at all.

Slow-Cooker Chicken Tortilla Soup

I would have given this 10 stars, and I'm not a fan of soups or mexican flavors. I did leave out the cilantro and tortilla chips. It needed more salt so I added another 1/2 teaspoon. Served with a side of corn bread. I also thought that 1 lb. of shredded chicken was not enough so I boiled a cut-up whole chicken in water with 3 stalks of celery, cut up carrots and an onion cut in half w/1 tablespoon of whole peppercorns. Boiled it for about 2 hours or until the meat was falling off the bone. Let it cool, discard veggies, shred. Makes for a very hearty meal.

Chili I

My husband absolutely loved this recipe. He ate 2 huge bowls and got sick because he ate so much! I did not have any coriander on hand, so it was ommited, but you couldn't tell. Make sure you let it cook for at least an hour. I noticed the flavor changed (for the better) after simmering for a while.

Garlic Mashed Potatoes Secret Recipe

I served this at a dinner party (cut the portion down to 10 servings) and it was a hit! Although I only used about a tablespoon full of pressed garlic, it still seemed like too much. No one else thought it was too garlicy but I guess that's just a matter of opinion! This recipe still gets 5 stars from me.

Mediterranean Crusted Chicken

This was very easy to prepare, very juicy and tasty. My family loved it. Only thing I did different was, since I did not have any fresh basil, I substituted for 1 tablespoon of dried basil.
