Baked Yam and Potato Casserole

This was a great dish except my husband is not very fond of sweet potatoes. I used chicken broth w/herbs instead of the veggie broth. Great flavor!

Giblet Gravy I

This was great, the only thing I did different was added 2 buillion chicken cubes to richen the flavor, and added chicken livers for the stock. My husband absolutely dispises the giblets so I strained it out for him. He loved the flavor of the gravy though.

Delicious Chicken Casserole

Could have used double the topping as the buttery cracker topping added so much more to the flavor. Even my picky kids ate it up!

Mahogany Chicken Wings

These were great. I marinated over-night for even more intense flavor, cooked on my pampered-chef bar pan (No "turning over" required) for 50 min and they turned out awesome!

American Lasagna

This was good. I doubled the sauce and cheese mixture and used 2lbs of ground beef. I only needed 9 noodles. I don't think there is any need to lay noodles on the very bottom, and don't lay them on very top, they will be hard. Start and end with beef mixture. Then cover with a light layer of mozerella.

Texas Ranch Potato Salad

Chili I

My husband absolutely loved this recipe. He ate 2 huge bowls and got sick because he ate so much! I did not have any coriander on hand, so it was ommited, but you couldn't tell. Make sure you let it cook for at least an hour. I noticed the flavor changed (for the better) after simmering for a while.

Charline's Sweet Potato Casserole

I thought this was great. The directions are not great though; it does not state to cook the potatos first before mashing. I assumed I was suppose to, but it then stated to cook until "tender". Well this made no sense. You can't mash raw potatos so I cubed them and cooked them. They had to cook much longer than 20 min for it to "set". In the end it turned out great, loved the topping also.

Savory Garlic Marinated Steaks

This is an awesome marinade. The first time it turned out perfect. The second time I only left it in the marinade for one night and it just wasn't enough. I know now to keep it in the marinade for at least two nights.

Burrito Pie

I served this for my husband and his guest one night. I was told that this was the best thing they had ever put in their mouths!!! When layering, I used 2 tortilla shells instead of one. I also left out the olives since my husband doens't like them. I don't like refried beans, so I didn't eat it at all.

Slow-Cooker Chicken Tortilla Soup

I would have given this 10 stars, and I'm not a fan of soups or mexican flavors. I did leave out the cilantro and tortilla chips. It needed more salt so I added another 1/2 teaspoon. Served with a side of corn bread. I also thought that 1 lb. of shredded chicken was not enough so I boiled a cut-up whole chicken in water with 3 stalks of celery, cut up carrots and an onion cut in half w/1 tablespoon of whole peppercorns. Boiled it for about 2 hours or until the meat was falling off the bone. Let it cool, discard veggies, shred. Makes for a very hearty meal.

Basil Shrimp

I made this for Mother's Day, and as others suggested, cut the brown mustand in half. Out of the steak, ribs, salmon and all the side items, this shrimp was the biggest hit!!!! Will definately make this again. I bought 2- 2 lb. bags of colossal shrimp at Sam's for only $12 and this recipe made it well worth it!

With a few alterations, these were the BEST Gyozas I've ever had. I took it to a dinner and got so much positive response it was almost over-whelming. First of all, I chopped the veggies in my food processor very fine. Omitted onions and used green onions instead. Then, I browned the pork. After cooling, I put the pork in the food processor. Then I put the veggies in the frying pan with Sesame oil, 1/2 TBS of powdered ginger, and 2 TBS of Japanese Rice Vinegar. It will be somewhat of a mushy consistency, so just fry it for about 10 minutes. Then in a large bowl, mix it with the pork. Omit the egg, you don't need it especially if you are chopping everything in the food processor. It holds together just fine. These are a bit time consuming, but SO worth the effort.

Buffalo Chicken Dip

This was a HUGE hit at a party. Everybody wanted to know what was in it and I had to write the recipe down 3 times! Thank goodness it was easy to make and easy to remember the recipe. HOWEVER, OMIT THE CHEDDER!!!! This only makes this dish look unappetizing (greasy) and does nothing for the flavor. Trust me, I tried it both ways. Tastes and looks better without it. I used two extra cans of Tyson's chucky chicken and added more of Frank's hot sauce.

Holiday Dressing

This is by far the best dressing ever. I was cooking for 20 people so I used 18 oz. of cornbread mix without changing the other ingredients. It turned out awesome. I omitted the bell pepper though, since I'm not a big fan of it.
