Baked Pumpkin Bread

Reviewed: Oct. 16, 2008
Great recipe, it turns out super moist every time! Sometimes I substitute 2 tsp pumpkin pie spice for the cinnamon and nutmeg. I've also used 1/2-3/4 cup whole wheat flour with success.

Classic Bran Muffins

Reviewed: Sep. 22, 2008
These muffins are great...I make them all the time. They are definitely better after sitting for a few hours or overnight. Not the best straight from the oven. Sometimes I use half whole wheat flour and half AP flour. I either leave out the raisins or substitute with chopped dates.

Mom's Chocolate Chip Cookies

Reviewed: Sep. 17, 2008
Thank you...finally a recipe for chocolate chip cookies that tastes great and maintains its shape while baking(doesn't flatten out). I did use only 1 1/2 sticks of butter and used white chocolate pudding mix.

Japanese-Style Sesame Green Beans

Reviewed: Jul. 25, 2008
I thought these were great....a nice side dish for any asian meal. I only had 1/2 lb of fresh green beans, but ended up cutting back on the oils by more than half. I used hot chili sesame oil because that is all I had on hand and it gave the beans a nice spiciness. However, my 3 year old toddler did not care for them at all!

Roasted New Red Potatoes

Reviewed: Mar. 17, 2008
Great recipe! Used this along side our St. Patty's day corned beef...preferred this to the usual boiled/steamed potatoes. The potatoes I had were a little large, so I cut them into quarters instead of halves.

Gingerbread Men

These were great!! I am usually not a fan of roll out cookies, because of the time involved, but these are worth it...I plan on making them again next year.

Walter's Chicken and Mac

Reviewed: Dec. 23, 2007
I loved that this was a quick and easy meal to put together. My two year old ate it right up! I was skeptical about using cream of chicken soup to make a cheese sauce...and for good reason...the end product didn't taste cheesy enough for me. My suggestion...if you choose to use cream of chicken soup, then use a really sharp cheddar to give it more cheese flavor. Otherwise, if all you have on hand is mild cheddar, then use a can of cheddar cheese soup instead of the cream of chicken.
