About this Cook
I ama newly diagnosed diabetic, so I am alsways looking for ways to adapt recipes.
My favorite things to cook
Everything
My favorite family cooking traditions
When I was young I spent alot of time with my maternal grandma whon was raised in Italy. She taught me how to cook like they did in the old country. She was a master of anything with sauce, but could make shoe leather out of a roast.
My cooking triumphs
Have cooked Thanksgiving three times and ran out of gas the first one. Probably broke a couple of laws trying to get my tank refilled on a holiday but, dinner was on time.
My cooking tragedies
Burnt stuffing the same Thanksgiving. Thank goodness we make more than one kind!

Raspberry Kielbasa over Cheese Grits
I made this with turkey kielbasa and sugar free preserves as I am diabetic. I gave it 4 stars for its creativity and unique flavors... however.. I wonder if I did something wrong. Maybe I needed to caramelize the meat more or something... just seemed like it was missing something. I will try it again tho.

Slow-Cooker Pepper Steak
I made this today, also using the precut sirloin strips from my grocery store. I also used one each red, yellow and green pepper for some color. Not sure if my brand of stewed tomatoes lacked liquid or what but I had to add quite a bit more liquid... I just disolved some more bouillon and cornstarch and tossed it in and a bit more soy sauce too. I shared it with my parents and actually got a call saying it was excellent and a keeper for sure. I think I may try it with chicken strips too. Served mine with some rice and it was perfect although I could have justeaten it plain and been happy too.

Easy Pumpkin Muffins
These are so good and so easy! I used a french vanilla cake mix and added some cinnamon chips and no other spices and they are wonderful. I mold my tops a bit to give them a neater look, but even the ugly ones are tasty!
