Tasty Baked Mac n Cheese

This was super tasty! I ended up leaving out the cream cheese because I didn't have any. I used mozzarella and colby-jack cheeses. I also didn't use as much cheese as called for. It wasn't quite as creamy as I wanted it to be, so when I make it again, I will likely add more milk or maybe more sour cream - or maybe I'll make sure to have the cream cheese! I also added some pan fried hotdogs (because we always add hotdogs to mac and cheese).

Fiesta Fry Pan Dinner

This was REALLY GOOD!! I did make some adjustments based on what I had in the house. I used a jar of salsa, added olives and precooked the rice (didn't use the instant) with some cinnamon, ginger and cumin. After cooking, I added the rice to the sauce and served sprinkled with cheese. SO YUMMY!! Thanks!!

Chef John's White Sauce

This was absolutely awesome! I made a vegetarian lasagna but didn't really like the sauce that was with that recipe. So, I went looking for something with a bit more flavor. I found this!! It is really good... it made a bit more than I was expecting so the lasagna was a little overflowing but very flavorful. I don't typically measure spices, so I just dashed until it suited our taste. My husband loved it and he's not a fan of white sauce - and he's a meat-eater so it was high praise - for both the sauce and the lasagna! Thank you Chef John!!

I really love this recipe!! It is a little complicated to make it every week but it is definitely part of my monthly rotation! I usually serve this over rice because hubby doesn't like a lot of pasta.

Pineapple Pepper Chicken

This is one of my husband's favorites! I've scaled it down. I've substituted bbq sauce for the ketchup. I simply did not have any ketchup the first time I made it. My hubby liked it so much, I always make it that way! I've never used the peppers because I just haven't bought any =)

Garlic Ranch Chicken

I bake this instead of grilling. I let it marinate in a 9x13 before baking. I just brush the ranch on the chicken. Super easy... hubby loves it =)

Pineapple Pepper Chicken

Campbell's® 15-Minute Chicken and Rice Dinner

I made this for dinner tonight. I am giving it 4 stars because I made some changes. Even though tonight was the first time I made this, I wanted to add a little flavor to it since others said it was lacking. First thing, I cut up the chicken. I am currently pregnant and whole chicken breast seem to be too dry for me to eat. Secondly, I used chicken broth instead of water. I just added the broth, cream of chicken, broccoli and rice to the chicken after browning it. I let it simmer for about 7 minutes or so. My husband really liked it! His only complaint was the broccoli was not cooked to his standards (he likes it pretty squishy). We will definitely be making this again! I may try it with some squash or a different vegetable next time! =)

Lemon Mushroom Herb Chicken

My husband really liked this one! I thought it was pretty tasty, but it was lacking a little something for me. Perhaps next time I'll add a little more spices and use less flour. I also may add some fresh mushrooms to add some more mushroom flavor. Cooking time is pretty accurate... not quite long enough (or maybe I had the heat too low?). Overall it was good.

Tuscan Chicken

This was okay. My husband didn't like it too much... too much sauce. I think next time I will not add the whole can. I added canned mushrooms and a whole can of whole olives, which I sliced. It was good, but I don't know that I'll make it again any time soon.

Sour Cream Chicken

I made this for my little brother and hubby. Both love all things chicken. This was a big hit. I used chicken broth instead of wine because we don't drink. Turned out moist and tender. Definitely a keeper.

Garlic Chicken

My hubby absolutely loved this! I used the suggestion of butter instead of olive oil and it turned out great. I think next time I'll use a little more butter. The chicken came out moist and I only had to cook it for a little over 20 minutes. Definitely a keeper.

Chicken Noodle Casserole I

Spinach Casserole

My husband and I loved this! I got the impression it was going to be bland so I started adding ingredients from the get go. I added sliced olives and mushrooms. Instead of the old bread, I used some pre-seasoned bread crumbs that I had. I also added some tomato sauce across the top and sprinkled it with some grated cheese. This was a great starter recipe and I will definitely be making it again!
