Cauliflower Potato Soup

I loved this! Decrease the cream of chicken soup & cream cheese by 1/2 & blend the whole thing before putting it in the crockpot. I don't like the fake meat in it- next time I would add roasted pumpkin seeds, green apple & cilantro. (Nikki Dinki does this to squash soup and it's yummy!)

Summer Zucchini Casserole

I cut the butter in half and added about 1 c. cheese and corn. I also sauteed the onion and just thinly sliced the zuchinni and cooked for about 45 min.

Oatmeal Peanut Butter Cookies

Omit the shortening & margarine and use 1 c. butter. I added about 1/4 c. extra flour and chocolate chips! I love the oatmeal in it!

Roasted Cauliflower Soup

LOVE the roasted flavor! I did add some carrots, and brocciflower, tripled the milk with a little cornstarch and used white wine instead of dry sherry. So good! I added extra garlic salt, but I wouldn't suggest that! Made it a little too salty! Next time I will roast garlic with the cauliflower and other veggies!

Apple and Spice Pork Roast

This recipe is a 5, mine was like a 3. I only had avocado, ciabatta, turkey, green peppers & meunster. It was good, but red peppers would have really made it!!

Teriyaki Pulled Pork Sandwiches

This was yummy, but I would definitely suggest low sodium Teriyaki sauce. This was a little too salty for my taste! DON'T skip out on the sliced pineapple- that really tops it! 2nd time made: I decreased the teriyaki sauce by 1/4-1/2c. and I added pineapple chunks to the crock pot. That made it go from a 4 star to a 5 star. SUPER good!

Cauliflower Fried 'Rice'

This was an awesome way to use up cauliflower for picky eaters! I did make some changes: *I used pork chops & marinated them in 1 c. soy sauce, 2 TBS corn starch, 1/8 c. brown sugar, chopped ginger & 2 garlic cloves. Then I cooked the meat and set the sauce aside for the last few min of cooking to give the cauliflower flavor and to cook out raw meat sauce. *I used oil instead of sesame oil because it doesn't burn as easily. I later used a little sesame oil for flavor. (I didn't need anymore soy sauce later) *I also used a whole cauliflower & 2 carrots. I then shredded them with my salad shooter & cooked at the same time. It took WAY longer 5 min to soften up- more like 20! * Add more eggs too! I think 4-5 is sufficient. Super Yummy!!!

Loved it! I just did pineapple, strawberries, oranges, bananas & mango. Next time I'd decrease the sauce a little cause it was slightly too runny.

Pasta With Peanut Sauce

Very yummy! I doubled the red pepper & peanut butter; quadrupled the bean sprouts; added shrimp and a little more ginger for a nice fresh added flavor. The broth does make it a little saltier than I like, but overall a great meal
