Slow Cooker Fall Harvest Pork Stew

This was a yummy and hearty stew. Few changes: 1. instead of French Onion Soup I used onion soup mix, 2 c. water, & 1 can of cream of chicken soup; 2. Carrots instead of parsnips.; 3. Calabaza squash instead of Butternut. (Just cause I had it on hand). It was a little greasy, but that comes with pork! I would also add the squash and apples towards the end so they aren't so mushy! I thought the apples might be weird with this, but they were a nice addition, just need to be added later!

Potato and Ham Soup

I used cream of chicken soup instead of celery and 1/2 & 1/2 with cornstarch instead of heavy cream. I also added some boullion because the flavor was a little bland. It was good, but nothing terribly special! I like a different ham and potato soup on here!

Teriyaki Pulled Pork Sandwiches

This was yummy, but I would definitely suggest low sodium Teriyaki sauce. This was a little too salty for my taste! DON'T skip out on the sliced pineapple- that really tops it! 2nd time made: I decreased the teriyaki sauce by 1/4-1/2c. and I added pineapple chunks to the crock pot. That made it go from a 4 star to a 5 star. SUPER good!

Strawberry Swirl Cheesecake Bars

I couldn't find any frozen strawberries in syrup, so I used frozen strawberries, smashed and thickened it up with the corn starch and sugar. SO good! The cinnamon graham crackers gave it a nice kick!! In case you don't have condensed milk: 2 eggs 1 c. brown sugar 1 tsp. vanilla 2 tbsp. flour 1/2 tsp. baking powder 1/4 tsp. salt Mix all ingredients and use as a substitute for sweetened condensed milk. Ingredients for Strawberries in Syrup: 2 cup Strawberries (loosely packed; fresh or frozen) 1/8 cup white sugar 1 tBS cornstarch (disolved in a little water) Instructions: 1. Cut strawberries into halves or quarters (depending on preference; if the strawberries are fairly small you may leave them whole). 2. Place strawberries in a saucepan and pour sugar on top and place on burner set between medium and medium-low. 3. The mixture will slowly become watery at which point you can set the burner to medium. Once the mixture begins to boil add dissolved cornstarch while stirring the mixture. 4. After boiling for 1-2 minutes (remember to continue stirring) you can remove from the burner. The syrup can be used hot or can be refrigerated and used cold, depending on your preference.

Luscious Four-Layer PHILLY Pumpkin Cake

This was a very moist cake! I really like pumpkin, so I thought it was good, but I would probably decrease the pumpkin added to the cream cheese mixture! I did double the recipe like suggested by others and it just made too much!!

Christmas Cookies in a Jar

I gave it 4 stars for it's potential! The white chocolate chips and cranberries are yummy, but this recipe was SUPER sweet and super greasy. I even decreased the chips & cranberries to about 2/3 or 1/2 c. each.

Cauliflower Fried 'Rice'

This was an awesome way to use up cauliflower for picky eaters! I did make some changes: *I used pork chops & marinated them in 1 c. soy sauce, 2 TBS corn starch, 1/8 c. brown sugar, chopped ginger & 2 garlic cloves. Then I cooked the meat and set the sauce aside for the last few min of cooking to give the cauliflower flavor and to cook out raw meat sauce. *I used oil instead of sesame oil because it doesn't burn as easily. I later used a little sesame oil for flavor. (I didn't need anymore soy sauce later) *I also used a whole cauliflower & 2 carrots. I then shredded them with my salad shooter & cooked at the same time. It took WAY longer 5 min to soften up- more like 20! * Add more eggs too! I think 4-5 is sufficient. Super Yummy!!!

Ricotta and Spinach Stuffed Manicotti

This was delicious! I used fresh spinach and added mushrooms, but kept everything else the same! I omitted the water, which I think was a mistake because I had a few noodles that weren't completely done.

I have always melted chocolate & peanut butter chips on top. I prefer the peanut butter melted in it!!! Add the chocolate drizzle for an added YUM!

Pasta with Mushroom and Zucchini Sauce

I give this a 3, but it has more potential! 10 zucchini is a ton- I used 2 large zucchini and 2 small yellow zucchini instead and it was overflowing in my large skillet. I love chunky veggies, but I chopped everything very fine for this. I would suggest to puree the veggies. But flavor was definitely there, just needs some tweaking! I added garlic salt, pepper, parmesan and served with fresh tomatoes. (That really helped to compliment the mushroom flavor!)

Dianne's Pumpkin Cookie Cups

It was all right, but there are definitely better pumpkin desserts out there. A little heavy and too much spice for my taste. I think I will try tweaking the filling next time- though my 6 year old couldn't get enough of the filling! Maybe adding the pumpkin and spices into the cookie and just a basic cream cheese filling would be yummy!

Summer Zucchini Casserole
