Wave Your Flag Cheesecake

Reviewed: Aug. 3, 2010
It was OK. The pound cake was a little soggy in it, so I am not sure if I goofed it up or not.

Apple-Feta Tossed Salad

Reviewed: Aug. 3, 2010
Not bad! My husband made it and put in too much lettuce so I couldn't get a good feel of the flavoring, but it seemed good!

Easy, Cheesy Zucchini Bake

Reviewed: Aug. 5, 2010
I sauteed garlic, onions & the ground turkey. I also browned the zucchini before I baked it and put it over rice like other reviews. It was good, but I would definitely say it wasn't anything special!

Unbelievable Grilled Garlic Bread

Reviewed: Aug. 5, 2010
This recipe needs to be tweaked, but I am not sure how. It had too much of a garlic and mayo flavor. My husband cooked it a little too long and that didn't help either. I love garlic, but this was a little too much for my taste buds. Maybe add less of the 2 ingredients and DON'T over or under cook it.

Banana-Zucchini Bread

Reviewed: Aug. 12, 2010
We may have to re-try this because I don't understand how it was so great for some! Mine was SO dry. I did change things slightly: doubled zucchini, applesauce instead of oil, halved with granulated sugar, reduced brown sugar by 1/4 c.

Peach Raspberry Cobbler

Reviewed: Aug. 15, 2010
This was really yummy! We did cook it in a dutch oven, used less butter and just pre-made a cake mix instead of making homemade (though I love the homemade much more, we were just rushed!) I would definitely add more peaches and raspberries to make it more fruity!

California Grilled Veggie Sandwich

Reviewed: Aug. 23, 2010
My husband gives this a 3 1/2 stars, I give it a 4. Everything tastes better off the grill! We used green peppers instead of red. (Though I prefer red, we just had green on hand).

Farmer's Market Vegetarian Quesadillas

Reviewed: Aug. 23, 2010
Pretty basic stuff! Our family loves the uncooked wheat tortillas. I didn't have a red pepper on hand, but it was still good with everything else. In fact, we made the Mediterranean Wrap last night with all the same vegetables grilled, so we just threw in the left overs for this. Super good with grilled veggies!

Mediterranean Wrap

Reviewed: Aug. 23, 2010
Not too shabby! I did not add red onion or red pepper because I didn't have them on hand. I did add green pepper, basil and sun dried tomatoes and they were a nice addition.

Zucchini Risotto

Reviewed: Aug. 26, 2010
So, I did a very improvised version- I used boullion and water instead of chicken stock (which was too salty, so I would decrease the boullion to about 4 or 5 cubes to 7 c. water); I didn't know what Arborio rice was, so I just used regular long grain rice and it worked out fine. A few things to note for next time: add more vegetables (i.e. mushrooms, yellow squash, etc.), add less boullion and cut up veggies smaller. I think this is a POTENTIAL 4 star! What I made was more 2 1/2 star because of salt! Oh, and be prepared to do a LOT of stirring!

Squash and Zucchini Casserole

Reviewed: Sep. 6, 2010
I think this recipe would be awesome if you made it mediterranean style!!! Omit the butter and drizzle some olive oil and basil; double the tomatoes (I squeezed the tomatoes a tad to get rid of some juices!); and load on some fresh garlic or garlic powder! YUM! We made this recipe as noted but only did 2 TBS of butter, served it over rice and added garlic powder and soy sauce.

Teriyaki Pulled Pork Sandwiches

Reviewed: Sep. 6, 2010
This was yummy, but I would definitely suggest low sodium Teriyaki sauce. This was a little too salty for my taste! DON'T skip out on the sliced pineapple- that really tops it! 2nd time made: I decreased the teriyaki sauce by 1/4-1/2c. and I added pineapple chunks to the crock pot. That made it go from a 4 star to a 5 star. SUPER good!

Luau Punch

Reviewed: Sep. 6, 2010
This was good! We looked at the ready and prep time of 10 minutes and didn't notice the "freeze overnight" part. So, 2 hours before our party we mixed the pineapple juice & OJ and mixed dry ice into it. This would be yummy to add crushed pineapples with the juice and don't freeze the lemon-lime drink with it, but serve the slush over the soda!

Peanut Butter Vegetable Chicken Soup

Reviewed: Sep. 13, 2010
Don't hold out on the peanut butter! That's the best part! Do chunky peanut butter! Few changes I did (only because I didn't have it on hand): omitted broccoli, celery and just added 1 green onion. I doubled up on most of the veggies and it still needed more! (We like a lot of veggies in our soups!) It was still pretty good with the changes!

Pasta with Mushroom and Zucchini Sauce

Reviewed: Sep. 15, 2010
I give this a 3, but it has more potential! 10 zucchini is a ton- I used 2 large zucchini and 2 small yellow zucchini instead and it was overflowing in my large skillet. I love chunky veggies, but I chopped everything very fine for this. I would suggest to puree the veggies. But flavor was definitely there, just needs some tweaking! I added garlic salt, pepper, parmesan and served with fresh tomatoes. (That really helped to compliment the mushroom flavor!)

Peach Muffins

Reviewed: Sep. 16, 2010
Gooey, not super sweet, goodness! I changed a few things: instead of 1 1/4 c. oil I used 3/4 c. applesauce & 1/2 c. oil; 1 c. brown sugar instead of 2 c. white sugar; 2 1/2 c. of really ripe peaches. I would also do 1/2 the cinnamon next time because it was a little much for me!

Zucchini Bread

Reviewed: Sep. 26, 2010
I am known for my zucchini bread, so I always veer from new recipes, but I always love the sour cream in breads because it makes things so moist so I tried it. It was delicious! I think my bread is slightly more flavorful, but this is more moist at first! I did 1/2 of the oil with applesauce and peanut butter chips for the chocolate chips. Also, we are at a higher altitude and the cook time was still cut down to 25 minutes uncovered and 35 min. covered with tin foil! (60 min. total)

Hearty Tuna Casserole

Reviewed: Sep. 26, 2010
Well, this is a nice healthy step up from your tuna helper! I would definitely say to shred the zucchini for texture purposes. Also, make sure to add at least 1 c. cheese because our was pretty dry! Next time I'll go for the cream of mushroom instead of mayo for creaminess!

Creamy Chicken on Linguine

Reviewed: Sep. 28, 2010
Yummy flavor! Few changes: omitted the cream and milk and just used about 3/4 c. of 1/2 and 1/2. I used a little cornstarch to help thicken it up without adding the extra fat! I also added chopped zucchini for some veggies! I would definitely add more of the Italian veggies next time! I would also wait to cook the chicken until you are ready to add it because it dries out quickly!
