Peanut Butter Easter Eggs

Pretty good! The peanut butter to chocolate ratio is not equal! I would do smaller sizes next time. Also, the dipping is a pain because the peanut butter doesn't stick together well enough! I tried all sorts of ways to get this to work, but it definitely wasn't easy!

Chef John's Macaroni and Cheese

Creaminess was nice, but was somehow still weird in texture. It tasted more like unflavored, boxed mac & cheese! I omitted the topping and did some ritz crackers. I also omitted the thyme & Cayenne, but I'm pretty sure those 2 spices wouldn't have saved the dinner!

White Chocolate Raspberry Cheesecake

Delicious and rich!! Doubled the crust and cooked in a larger springform. I did cinnamon crust and omitted the raspberry mix because it looked rotten and gross. I just added pie filling on top instead! I wrapped the outside of the pan in 2 layers of foil and put it in a jelly roll pan with hot water. Cooked for 60 min., then turned off the oven and left it for about 3 hrs. before chilling. Don't overcook and don't overbeat the mixture or your eggs will seperate and leave a funny texture!

Layered Macaroni Casserole

Pretty easy and basic. We used Ritz crackers on top instead. Tastes a lot like Lasagna but I prefer the smaller noodles! Hubby loves this dish!

Very good hearty soup! Doubled veggies and added about 1 1/2 c. more water. I also halved the margarine and did 2 c. cheese. Delicious!

I followed the recipe exact (except substituting 1/2 oil with with applesauce). They turned out really dry. I think I will add milk instead of water next time, but not sure how much that will help!

Broccoli Chicken Divan

I give my rendition a 5 star. I omitted the butter & crumbs. I added 1/2 c. sour cream, garlic salt, ritz crackers, doubled the cheese, cream of chicken soup instead of broccoli. Very good!

Gramma's Cream of Broccoli

3 stars for flavor and FIVE for creaminess!!! I added a head of broccoli, 1/2 onion, cheese, cornstarch and kept the 3 c. of water in in the beginning. I had to add quite a bit of salt to pep up the flavor, but man was the creaminess good!! ATTEMPT 2: tripled broccoli, added 1/2 & 1/2 instead of the extra cup water, a little cornstarch, 2 Chicken Boullions and cheddar. This was almost there! Next time I will add more boullion cubes and I think the creaminess & flavor will be perfected!

Creamy Pesto Shrimp

Replaced the cream for milk and 2 Tbs. flour. Added zucchini & pepper medley. Decreased the Parmesan by 1/2 and increased the Pesto to about 1/2 c. Delicious!

Super good, but you can save yourself some money on the mangos and buy peaches. There isn't a strong mango flavor. I did omit the raisins (dislike), coconut & walnuts (didn't have). I also added PB chips. Delish!
