Peanut Noodles

So delicious with some change. Replace sugar & vinegar w/honey. Add red peppers, increase peanut butter to 1/2 c. and top with fresh lime juice & plenty of minced ginger! (Make sure to use reduced sodium soy sauce to decrease saltiness.)

Baked Fried Eggplant

Not too bad. I did what another reviewer said and rubbed the eggplant in lemon juice & salt for 30 min. and then washed and prepared as stated. We did end up pan frying them in a little bacon grease because they were just too mushy still after baking. Not too bad!

Ramen Coleslaw

Not bad, but nothing great. Kills my jaw from all the chewing. :0 I did change it just a bit- I added 3 Tbs. sugar, 1/4 c. veg oil, 4 Tbs. rice vinegar, 2 pkgs of ramen & 1/2 c. toasted almonds. I originally gave this 3 star when the ramen was crunchy- not a fan. But once it set in the fridge for a day..... yummy and a hit!

Spiced Butternut Squash Muffins

Pretty good. The current ingredients need to be doubled and use 4 cups squash (whole butternut). I did half brown & half white sugar and added extra nutmeg. This would also taste yummy as a dessert with cream cheese frosting, or plain with chocolate chips and/or nuts.

Pesto Pizza

Love the flavors!!! My only issue was the feta doesn't melt, so it gives it a weird texture. Next time I would use mozzarella!! Oh, and red peppers!

Pesto Cream Sauce

I really like the cream base with the pesto sauce- gives it a nice balance! I did use 1/2 c. evaporated milk, 3/4 c. light sour cream & 1/2 c. parmesan for my cream sauce instead of the flour/butter/milk base. Chicken & fresh tomatoes is a good addition too!

Easy Fish Tacos with Mango-Pineapple Slaw

This recipe needs help! I didn't add jalapeno or onions because I am not a spicy fan. Next time I would use 2 mangos, 1-3 TBS. vinegar or fresh lime juice, greek yogurt in lieu of mayo, and keep everything else the same. If you skip out on cilantro FRESH pineapple and mango it will drastically change the flavor profile and not be as good! As far as the fish, my cod always turns out rubbery, so we shredded it, but I would use Tilapia or Flounder or another white fish instead.

I have never made or had these, so I didn't know what to expect. Only took me 2 tries to get the poached egg, so thanks for the good directions! Too much lemon juice though and definitely puts a dimple on the buns!

Twice Baked Potatoes

Omitted onion & chives. (Didn't have chives on hand). I added onion powder and red peppers. The bread crumbs aren't necessary and make sure to use bacon- not bacon bits!! I did cook at 450 for 45min-1 hr.

Pasta With Peanut Sauce

Very yummy! I doubled the red pepper & peanut butter; quadrupled the bean sprouts; added shrimp and a little more ginger for a nice fresh added flavor. The broth does make it a little saltier than I like, but overall a great meal

Very good! I did decrease the butter to 1/3 c and the sugar to 3/4 c. This was more than enough. It does make a lot of bread, so be prepared!
