Spinach Tomato Tortellini

This was delicious! The sauce was a little heavy, so next time I'd lighten it up a little & do more milk & less cream. I added fresh garlic, onions & tomatoes instead of canned. I also added feta cheese. My kids gobbled it up!

Grilled Orange Vinaigrette Chicken Salad

I like the freshness of the salad, but it does need some work. A few changes I made: I added ginger & garlic to the dressing and marinated the chicken in it. I omitted the broccoli and oranges. Instead I added mango, avocado & cucumbers. I think this could really go for a good arugula mix and maybe a little more tweaking, but overall a good base!

Grilled Fish Tacos with Chipotle-Lime Dressing

Loved this! I mixed the cilantro, sour cream sauce & cabbage together- making it like a coleslaw. I also added a corn salsa I found off allrecipes & these were DELICIOUS! (I did omit adobo sauce & seafood seasoning. I don't like a lot of heat & didn't have the seasoning.)

Tomato, Corn and Avocado Salsa

Yummy! I put this on fish tacos and it was delicious! I did omit jalepenos because I don't like spicy. I also didn't have onions or peppers so I didn't add them, but it was still yummy!

Delicious! I did decrease the sugar & water slightly. (Adding water to bread seemed odd.) This was really yummy! It tastes even better the second day which rarely happens with bread!

Cauliflower Fried 'Rice'

This was an awesome way to use up cauliflower for picky eaters! I did make some changes: *I used pork chops & marinated them in 1 c. soy sauce, 2 TBS corn starch, 1/8 c. brown sugar, chopped ginger & 2 garlic cloves. Then I cooked the meat and set the sauce aside for the last few min of cooking to give the cauliflower flavor and to cook out raw meat sauce. *I used oil instead of sesame oil because it doesn't burn as easily. I later used a little sesame oil for flavor. (I didn't need anymore soy sauce later) *I also used a whole cauliflower & 2 carrots. I then shredded them with my salad shooter & cooked at the same time. It took WAY longer 5 min to soften up- more like 20! * Add more eggs too! I think 4-5 is sufficient. Super Yummy!!!

Very yummy. I didn't add the oyster sauce so it was lacking in a little flavor, but we just used a little soy sauce to help. (Next time I'd add a different flavor profile though.)

Sweet Sticky Rice with Mangoes

This was good, but too sweet. I would cut back on the sugar and make sure to get a good mango (it makes the world of difference.) Also, I about died when I saw the caloric & fat content in Coconut milk- I didn't realize how bad it is for you! So this is definitely a once in a blue moon treat!

Mini Green Bean Casseroles

My husband and I aren't big green bean casserole fans and we both loved this! Just make sure to load the cups as much as possible with the beans- otherwise you don't get as good of a ratio.

Apple Orchard Punch

this was okay, but too tart. We watered it down a lot with more soda & apple juice. I also added cranberries with the apple for looks. I am not sure what I would change, but it's a good base.

Cauliflower Potato Soup

I loved this! Decrease the cream of chicken soup & cream cheese by 1/2 & blend the whole thing before putting it in the crockpot. I don't like the fake meat in it- next time I would add roasted pumpkin seeds, green apple & cilantro. (Nikki Dinki does this to squash soup and it's yummy!)

Such a yummy combo! I think it took me 75 min in cooking time. Also, I halved the butter & honey- which was plenty. I then added a little ginger and it was yummy!
