Butternut Squash Cakes

I thought these were pretty tasty! I used regular flour and next time I could cut the curry in half. The sour cream and pumpkin seeds are a must!

Cauliflower Fried 'Rice'

This was an awesome way to use up cauliflower for picky eaters! I did make some changes: *I used pork chops & marinated them in 1 c. soy sauce, 2 TBS corn starch, 1/8 c. brown sugar, chopped ginger & 2 garlic cloves. Then I cooked the meat and set the sauce aside for the last few min of cooking to give the cauliflower flavor and to cook out raw meat sauce. *I used oil instead of sesame oil because it doesn't burn as easily. I later used a little sesame oil for flavor. (I didn't need anymore soy sauce later) *I also used a whole cauliflower & 2 carrots. I then shredded them with my salad shooter & cooked at the same time. It took WAY longer 5 min to soften up- more like 20! * Add more eggs too! I think 4-5 is sufficient. Super Yummy!!!

Korean Saewoo Bokkeumbap (Shrimp Fried Rice)

Very yummy. I didn't add the oyster sauce so it was lacking in a little flavor, but we just used a little soy sauce to help. (Next time I'd add a different flavor profile though.)

Sweet Sticky Rice with Mangoes

This was good, but too sweet. I would cut back on the sugar and make sure to get a good mango (it makes the world of difference.) Also, I about died when I saw the caloric & fat content in Coconut milk- I didn't realize how bad it is for you! So this is definitely a once in a blue moon treat!

Mini Green Bean Casseroles

My husband and I aren't big green bean casserole fans and we both loved this! Just make sure to load the cups as much as possible with the beans- otherwise you don't get as good of a ratio.

Apple Orchard Punch

this was okay, but too tart. We watered it down a lot with more soda & apple juice. I also added cranberries with the apple for looks. I am not sure what I would change, but it's a good base.

Cauliflower Potato Soup

I loved this! Decrease the cream of chicken soup & cream cheese by 1/2 & blend the whole thing before putting it in the crockpot. I don't like the fake meat in it- next time I would add roasted pumpkin seeds, green apple & cilantro. (Nikki Dinki does this to squash soup and it's yummy!)

Such a yummy combo! I think it took me 75 min in cooking time. Also, I halved the butter & honey- which was plenty. I then added a little ginger and it was yummy!

Asiago Sun-Dried Tomato Pasta

Sauce is delicious! A few changes: I added 3 oz Asiago & little basil to the sauce. I used 2 cups 1/2 & 1/2 & 1 cup milk instead of the heavy cream. I also omitted the onions & butter. I had homemade sun dried tomatoes and had no issues with them being hard like others. Next time I would definitely add mushrooms and the omit the chicken. Green onions are a take it or leave it.

Baked Apple and Kale Casserole

This wasn't too bad! I think if you added sun dried tomatoes and served it over rice or chicken it would be much better. We served it over breaded chicken and it was pretty good! I only give it a 3 star cause it needs a little tweaking and my hubby and kids didn't care for it, but I thought it wasn't bad!

Baked Teriyaki Chicken

Very good sauce. I cooked my thighs around 350-375 for 30-35 min. Use a thermometer to gauge. I marinated the thighs in the sauce for a couple hours and it really made the meat tasty! I also used fresh ginger instead of powder! Next time I would use breasts or legs. Thighs have a pretty game-y flavor.

Peach Surprise Pie

Made 2- one with graham cracker crust and one pastry- Graham cracker was by far better and a bigger hit! I used homemade raspberry-peach jam for the preserves. I think next time I'll add some lime juice/lime zest to make it pop. I did as other reviewers on adding 1 small vanilla pudding & 3/4 cup milk to the cream cheese. Also, I used fresh peaches and added it right before serving.

Caribbean Zucchini Bread

De-lish!!! A few modifications: I added all white flour instead of wheat; decreased white sugar to 1/2 cup; I also used fresh blueberries instead of coconut & walnuts. Also, I cook my bread at 350 for 50 min. (Last half covered with tinfoil so it doesn't burn.)

No-Noodle Zucchini Lasagna

This was pretty tasty use of fresh garden foods! I used g. turkey instead of beef and fresh tomatoes, 2 Tbs. sugar & salt instead of tomato sauce. I also substituted red wine with beef broth and 2 Tbs. Balsamic Vinegar. (I didn't have it, but I think it would have really helped the sauce!) Also, make sure to really slice the zucchini thin & really get it to sweat with salt & patting with a napkin. (There is so much moisture in the zucchini!) Next time I will slice zucchini thin, add cottage cheese & less spinach to cater to the little ones a little bit more!

Really good flavors. I added chicken, basil, couple slices of Havarti Cheese & Parmesan. Next time I wouldn't add so much cheese and just do a light white sauce. (Bacon would be a great addition!)
