Chicken Pot Pie Soup with Toasted Almonds

This recipe went over very well in our house. I did tweak it a little for health reasons; I used a cholesterol friendly option in place of butter and used another tbs of flour in the paste, and skim milk instead of cream. I skipped the almonds too and served it over biscuits. Yummy!

Caramel Chocolate Corn

Fudge Frosting

Easy to make, but I was unsure if I should leave the frosting on the heat while beating in the sugar and egg whites. I found it to be a little "gritty" textured, so I stuck it back on the heat to try and incorporate the sugar better, but it still wasn't perfect. The consistency was perfect and didn't need any water. I poured it on the cake when it was still a bit warm, and it spread very nicely over the cake. I let it drip down the sides of the cake instead of frosting the sides and it gave it a nice effect. It hardened up nicely and I topped it with peanut butter chips; everyone enjoyed it.

White Chip Chocolate Cookies

Warning: Make sure you have plenty of milk to drink before making these. These are AMAZING!!! The whole family went nuts for these cookies. I didn't change anything, but I used Andes candies pieces, and the combination of the mint and chocolate cookie were to die for. I can't wait to try these with white choc and peanut butter chips. Thank you for the perfect chocolate cookie recipe.

Good Old Fashioned Pancakes

I've made several versions of pancakes, and these were probably the fluffiest I've ever made. The family loved them. Only change I made was adding a tsp. of vanilla. As per another review, I sifted the dry ingredients twice. UPDATE: I just made these with white whole wheat flour, a dash of cinnamon, tsp vanilla, smart balance instead of butter. I did not sift the ingredients at all and they were fantastic and super fluffy! I don't think you can go wrong with this recipe.

Lemon Chicken Tenders

Soooo good! I only used about 2 tbs of sugar and it was great. The sauce is very strong, but wonderful. I left half plain for the children. I also used Panko instead and they were very crispy and delicious. A new favorite for all.

Spaghetti Carbonara II

In spite of my pan being too hot, and ending up with a few "scrambles," it was delicious. This is absolutely going into the regular meal cycle. I added a bit of nutmeg and topped with some chopped, fresh sage that I had on hand.

Old-Fashioned Vanilla Pudding

Delicious. I used skim milk, and flour in lieu of cornstarch and it turned out perfect. I also only had 3 tbs of butter left, but again not a problem. I layered it with leftover chocolate cake and semi-sweet chocolate while the pudding was still warm. Heavenly.

Baking Powder Biscuits
