Best Easy Chicken Croquettes

I had not had chicken croquettes in years - but I used to love them! I did not use your exact measurements; I just kind of wanted a guide to remember exactly what to put in them. I would not have thought to use cream of chicken soup, but it worked quite nicely. I also didn't have poultry seasoning, so I used my own favorite "Thanksgiving blend" - which is essentially the same thing. ;) Thanks so much for sharing! These will be a new regular meal at our house!

Grandmother's Pound Cake II

Thank you for this wonderful, classic recipe! I have actually used your recipe a handful of times over the past year. I usually add mini chocolate chips to ours, and I'll mix up the pan sizes depending on what we're in the mood for. The last batch made one standard loaf, two mini loaves, and a dozen mini muffins. Delicious!

Fresh Pineapple Upside Down Cake

I was skeptical when it came time to separate the eggs, beating the whites and omitting a yolk, but I did it anyway. I wish I had followed my instinct, as the cake turned out with an odd, unappealing texture. If I were to use this recipe as a guide in the future, I would cream the butter with the sugar, and simply add all 3 eggs to the mix. Very disappointing cake resulting from an unnecessary step. Bummer!

Turkey and Quinoa Meatloaf

Well, I had been looking forward to making this recipe all week, so naturally by the time I got to the store, the quinoa bin was empty! I decided to try it with millet instead. Very tasty! I suppose you could substitute almost any small grain - but I do hope to try it with the quinoa soon!

Fluffy Pancakes

Well I was out of white vinegar, *and* butter - but my son REALLY wanted pancakes. So I just omitted the butter and took a chance by using seasoned rice wine vinegar (I know - risky!). Still came out just delicious. Thank you for this classic recipe.

Garlic Soup

I must admit, the first time someone suggested I try garlic soup, I thought it sounded awful. I tried it a few years ago at a tapas restaurant, and though it was delicious, I promptly forgot all about it. Recently a coworker brought a huge bag of peeled garlic into work that she was trying to get rid of (after purchasing way too much at Costco!). I brought home about 30 bulbs of peeled garlic not knowing what the heck I was going to do with it - then I remembered garlic soup. Came across this recipe, but I used chicken stock instead of bouillon, and tossed in all of the extra garlic I had. It was just wonderful. Reminded me exactly of the soup I had tasted at the expensive tapas restaurant....and cooks up in no time!

Soft Onion Breadsticks

These were very good. Every Friday, my son's class enjoys soups and bread for lunch made by the parents; when it was my turn to make the bread, I was looking for something that would go with the miso soup made by one of the other moms. These were perfect! The onion flavor was mild, but distinctive. The scent reminded me of the onion rolls from one of my favorite restaurants as a kid. I didn't have any poppyseeds so I simply omitted them. After school a few of the children asked me for the leftovers....

Blueberry Oat Waffles

I see that I added this recipe to my box around this time in 2007, so I guess I've been using it since then! We use this recipe often; I switch out the blueberries for whatever fruit I happen to have (tonight it was apples and cinnamon). I also use regular oats since I don't buy the quick-cooking kind; this has never seemed to matter. Thanks for the great recipe!
