Butternut Vegetable Soup

This soup was delicious. To make it easier I used one large can of pumpkin instead of the butternut and did not need to puree. It was thick and delicious and tasted even better the next day.

The Easiest Blackened Chicken

This recipe is super easy & my family loves it! Its my go to recipe when I'm not in the mood to cook. In less then two minutes the chicken is bubbling away and I can move on to something else. I've tried both chicken breasts & chicken thighs and I think thighs are best because they come out nice and moist.

Chicken with Chipotle

I only had skinless/boneless chicken breasts so I modified the recipe. Instead of roasting, which would probably dry out the chicken, I sauteed the breasts in 1 tbsp butter for about 10 minutes each side. I then made the sauce without the butter and added to the pan and cooked for another 10 minutes. The sauce seemed a little runny so I added 1 tbsp corn starch. I used 4 peppers because we like spicy but next time I'll cut it down to 3. It was a little too spicy. It tasted great served over brown rice. The whole family loved it!

Hearty Lentil Soup

My family loves this soup. Its thick & hearty and a perfect comfort food. I took the previous reviewers advice & substituted the olive oil for the butter & omitted the swiss cheese. Healthy & yummy, plus it is a Weight Watchers core food if you make the previous changes.

Poppy Seed and Banana Muffins

These were great! I made them exactly as called for and they tasted perfect. My whole family loved them including the two teenagers. Its wonderful to find a healthy & low cal alternative to those huge store muffins. Thanks for the recipe.

Quick Chicken Marsala

Loved this recipe. So easy & it tastes very similar to the $15 a plate dinner at a local restaurant. I added fresh mushrooms & thickened the sauce with 1 1/2 tbsp. cornstarch I served with garlic mash potatoes & green beans. Great meal! Thanks for the great recipe

Turkey Shepherd's Pie

My whole family loved this recipe. The only problem was that the serving size is way off. The 10 servings stated were perfect for my family of four which includes two teenagers and a 6'1" husband. You would hard pressed to serve 10 people with this recipe. The only changes I made were to add extra garlic and to sprinkle grated cheese on top of the mash potatoes. Delicious! I will definitely make this again.

Eggplant Parmesan II

This came out excellent my very first try. I had never prepared eggplants & took previous reviewers suggestion & used salt to "sweat" the eggplant. To do this you simply sprinkle salt on one side of the eggplant and let stand 20-30 minutes. The eggplant is then rinsed & dried with a paper towel. This added about 35 minutes to the total prep time. I increased the baking time to 10 minutes per side. Also my eggplants were quite big so two were plenty. This was so delicious that I will make again.

Greek Lentil Soup (Fakes)
