Charleston Breakfast Casserole

I have made this several times, I usually use 1/2 green pepper, 1/2 red pepper, 1/2 small re onion. I chop them up and saute them in a little of the bacon drippings. Because I let it sit overnight before cooking I add an additional 2 eggs and 1/2 cup milk, I never add salt because the bacon and seasoned croutons are salty enough. The results are superb. I started doubling the recipe because family loves to take home leftovers. I make a french toast casserole, fruit salad, coffee crumb cake, fresh bagels, coffee and mimosas for an excellent holiday brunch. Since it is all prepared the night before I just put it in the oven 1/2 hour before the crowds show up. They are always so impressed....

Kielbasa with Peppers and Potatoes

I use turkey kielbasa, seems to be less greasy. I also use the frozen bag of diced peppers and onions, less expensive than buying fresh peppers and also makes for a quick meal. This is perfect with a salad and some crusty bread.

Award Winning Soft Chocolate Chip Cookies

Best cookies ever! I mix 1/2 semi sweet choc chips and 1/2 milk choc chips. I chill my dough and always rotate my pans so I am not placing dough on hot pans. I also make half the batch with pecans and half without nuts for those with a nut allergy.

Herbed Greek Roasted Potatoes with Feta Cheese

Followed recipe exactly and it turned out perfect. Family loves it and guests are very impressed when I serve this with lamb or rosemary and herb rubbed sirloin tip. If there are any leftovers I warm in a skillet and serve with eggs and bacon.

Beef Steaks With Blue Cheese

Perfect, I only had gorgonzola on hand so I used that. And whole wheat instead of white. Next time I'll serve the steak on top of a big slice of texas toast!

Easy Cheesy Chicken I

Love it, I only switched the cream of mushroom with cream of celery since my husband hates cream of mushrooms. Came out perfectly! Do season the chicken well, rub in your salt, pepper and whatever other dry herbs and spices you like for a flavorfull dish!

Slow Cooker Cranberry Roast

I did exactly what the recipe called for and it lacked flavor. My entire family asked if I forgot the salt, and we don't usually use salt. I found it bland and would add some salt, and pepper next time. We were disappointed with the flavor, but the roast was tender and juicy.

Pecan Pie Bars II

Very easy to make, the only tough part is waiting for them to cool. You must wait until they are cool in order to cut into neat squares, if not they fall apart. I did add an additional 1/2 cup of chopped pecans and added 1/2 cup of milk chocolate chips. Everyone loved them, even the ones that claim they don't like nuts. This is a keeper and feeds a large crowd since they are so rich a little goes a long way.
