Black Bean and Corn Salad I

Reviewed: Jun. 23, 2009
MY dad's wife used to make this a lot. My sister and I could never get enough of it. Recently, I attended a birthday party for my best friend (a vegetarian) and told her I would make something. This was the first thing that popped into my head. I was VERY glad to have found it here! I made as directed, which filled a large mixing bowl. When I took it to the party (there were only 7 people there) I was afraid I had made too much. EVERYONE loved it. I got compliments from every single person there on how it tasted. One girl liked it so much, she topped her hamburgers with it. At the end of the night, all of it was gone. And now my boyfriend is requesting that I make more of it. **NOTE** I serve this with Tostitos Scoops!

The Very Best Burgers!

Reviewed: Jun. 23, 2009
These were pretty good. My boyfriend loved them, but I thought it was a little too much for a burger. Which was ironic because usually I'm all for complex flavor and my boyfriend usually enjoys more bland foods. My biggest turn-off was the bleu cheese. Again, ironic because I usually love it. But I think it just didn't work for this. We will probably make these again when the occasion arises, but not anytime soon. Still tasty and enjoyable, but not high on the list of my favorite dishes.

Salmon with Brown Sugar Glaze

Reviewed: Jun. 23, 2009
Made as directed. Came out excellent! Simple, but very tasty. The brown sugar and Dijon mustard are the perfect balance of sweet and tangy. The sauce would also top any variety of meat; be it chicken, steak or pork; very well! I loved this and will be making it again.

Dorm Room Chili Mac

Reviewed: May 18, 2009
Very easy and way more tasty than I'd thought it was going to be. This is now my new fav recipe to make when I'm in a time crunch. Loved by the whole family! Rating is based on recipe if made as instructed. The second time I made it I only had kielbasa on hand and used that with plain chili instead of hot dog chili. I liked it better. But it's already excellent if made as instructed!

Creamed Eggs on Toast

Reviewed: Jan. 7, 2009
I was just about to add this as a recipe of mine, but I did a search first and found this. My grandma used to make this for me all the time -- the morning after I would spend the night at her house. It's hands down my favorite breakfast item! My family makes it pretty much the same way as listed here, but this honestly looks better (we use less eggs and more butter per serving -- the rest is the same). The eggs are the best part, so I find my rating to be valid, I would give my own recipe 4 stars. I like the idea another reviewer to put crumbled sausage in this. My GOSH! That would be heavenly! For those of you who are questioning whether or not to try this: it sounds a lot more weird than it really is. I have yet to make this for someone and have them not like it. This is a classic breakfast dish in my family that's been made for over 40 years! And so well loved that we've all memorized the recipe.

Authentic French Meringues

Reviewed: Jan. 3, 2009
I've made meringues using this recipe 3 times now. They always come out perfect! My rating is based off of the first 2 times I made them, which is by the exact directions. This third time, I did add a little cream of tartar because I feel like I was having a stiffening problem because of the vanilla extract I added. So the rating is based on the recipe, the review is to tell you how I made them better (of course; it wouldn't be allrecipes.com if someone wasn't putting their 2 cents in!) I eyeballed the ingredients I added, so don't take it too literally. I added: 1/4 tsp vanilla extract, 1/4 tsp cream of tartar, an extra 1-2 TBSP confectioner's sugar. Once I had stiff peaks, I folded in 1/2 cup milk chocolate chips, and 8 miniature candy canes; crushed (add 2/3 of the candy canes to the mixture, save last 1/3 to sprinkle on top). Let me tell you: THESE are the best meringues I've ever had! But you may want to play with the cooking times and temp if you make it this way. Even leaving the oven door ajar, I had some that cracked... I think this way because of the candy canes--because they got so hot, they started bubbling. Bubbling candy canes look neat and are fun to pop.. but not very visually appealing on top of the cookie LOL. But, seriously, try it out. This version is going to be a definite repeat every Christmas.

Creamy Roasted Parsnip Soup

Reviewed: Jan. 3, 2009
This was a nice, thick, hearty soup. I made this at Christmas time for some friends and it was just perfect! I will definitely be making this again.

Butternut Squash Casserole

Reviewed: Jan. 3, 2009
I was hoping to find a recipe similar to something I had at a restaurant before. This was so, so close! I served this for some friends at Christmas time and it was a huge hit! Tasted fabulous! I also BAKED my squash instead of microwaving. The only thing I would change about this recipe is the topping. The restaurant version I had was a cake consistency, and this was more crunchy -- still delicious, though. Otherwise, this would be a perfect 5-Star rating from me. Preference aside, this is a fantastic recipe as-is.

Rogan Josh, Lamb Shanks

Reviewed: Jun. 12, 2008
I've only had Rogan Josh once before at a restaurant. I liked it better there. If you're a more experience RJ eater, then maybe you'll have a different opinion. One reason I didn't like how it tasted from the crock pot is the fatty lamb cuts caused the dish to be extremely greasy. If it weren't for that I think it would've been a lot better because it did have a decent flavor aside from that.

Gnocchi Bake

Reviewed: Dec. 28, 2007
This has become a household favorite. I'd say we eat it 1-2 times a month. I doubled the amount of gnocchi because I thought it needed more pasta the first time. After that it was perfect. As far as sauce goes, I use Gia Russa Marinara (it's the best.. try this recipe again with it and you'll see what a difference it makes!)
