Old Fashioned Mac and Cheese

Got rave reviews for this! I did not have the processed or swiss cheese on hand so used a combo of sharp and a mexican blend. I know we need to rate on the exact recipe, but gave this 5 stars because it does seem very flexible on your cheeses available or preference!

Easiest Oven Baked Chicken

I've made something similar to this for years, and find it a little more flavorful--just use crushed sesame crackers with a little garlic salt and pepper mixed in--add about a TB of lemon juice to the melted butter--a family favorite!

Deluxe Mashed Potatoes

I really found these pretty dry and bland--not sure what they are missing. I may try the substitution of the onion dip for the sour cream if I make it again and add some cheddar cheese.

Broiled Tilapia Parmesan

Excellent recipe--made last week and my husband asked to make it again soon--had it again tonight and it was still a huge hit! It does make a large amount of sauce, so cut in half if you are just doing 2-3 filets...enjoy!

Chicken Spinach Quiche

This is by far the best quiche I've ever made! I did use 3 eggs as others suggested and cut the milk to 1/2 cup. I shredded the chicken. First time I made it, I used frozen cut spinach, the second time I used fresh spinach--turned out great both times--very light and fluffy--reheats great, too. Cooked on a cookie sheet with a pie crust shield (can find them at Bed Bath & Beyond--they're great!)

One-Dish Chicken, Vegetable and Rice Bake

We enjoyed this, but found it to be a bit salty. Might only use half of the seasoning package from the rice mix next time. I actually put this together in the crock pot as we needed dinner ready as soon as we got home. I cubed the chicken and used low-sodium chicken broth, but it needed the water too so as not to be too dry in the crock pot. I used frozen peas and carrots and added a half can of french green beans for the veggies. I simply added the cheese as soon as we got in and it melted thru while setting the table and pouring drinks. It definitely worked and we'll do it again!
