I used this for a base recipe. When I make pumpkin pie , or any other pie for that matter, I use a 10" pie plate. Why go to all that work and not make a big pie? What happens is I always have filling left but not enough to make a 9" pie. What to do with the filling??? I poured my pumpkin pie filling into the crust and baked for about 6 mins till it was not runny any more and then poured the cheesecake part of this recipe on top. It was amazing! There were 3 pies at the party, a pumpkin, apple and my pumpkin cheese cake. Mine was gone first, then a little of the pumpkin, no one touched the apple. I have never liked pumpkin cheese cake before, just not my thing. This was the best of both worlds and used up my extra filling!!
