Easy Baking Powder Drop Biscuits

My kids love these. First I started doubling the recipe (but not the salt). Now I have to triple the recipe to feed my family of 7.

Double Layer No Bake Strawberry Cheesecake

This makes a delicious pie, even better when using supreme strawberry topping recipe on top as I did. My kids simply raved about it and my husband enjoyed as well. It is just creamy goodness. I tried a similar recipe years ago that I loved but alas lost. I thought this was it but I was mistaken. However I think the difference may be adding twice as much cream cheese. I will try that next time to see if I can capture the cheesecake taste.

Mom's Baking Powder Biscuits

My 16 year old son decided he wanted to make biscuits for the first time today. I have never had success with home made biscuits but I decided to give it a try with him. We picked this recipe because it looked to have the highest ratings yet fairly simply. As we have a big family, we doubled the recipe. Based on other reviews we increased the teaspoons of baking powder to 8 for 4 cups of flour. We upped the salt to 1 teaspoon (or 2 total). I also added a pinch of baking soda like 1/8 teaspoon and 1/4 cup of sugar. I had no vegetable shortening so I used half lard and half butter. The mix was too dry so we had to add a tad more milk just so it would come together. Still to dry to roll out so we just pressed down and cut out. We forgot to dip in shortening but there was plenty of oil in them. I have never seen biscuits rise up this beautifully before. The whole family was amazed. Seriously the best looking biscuits I have ever seen. Taste wise they were the best tasting biscuits I have ever made but not the best I have eaten. That may be due to my substitutions. I think I could have left out the baking soda and maybe a bit too much salt. However once we added syrup and or jelly they were absolutely perfect.

Easy to Remember Pie Crust

I am not sure what to say about this recipe. In appearance it was flaky. Rolling it out between plastic wrap was not too hard to roll (although not exactly easy either). I couldn't add all the water. In fact it didn't seem to need any water. Once I added the oil it went into a ball. However, I did add some water. Compared to what my mom used to make I would say this looked like it had too much oil in it. I noticed that the bottom crust never cooked no matter how long I left the cobbler in the oven. I am using the left overs again today but this time I am prebaking the crust before adding any filling so that I don't have the raw dough situation. I think overall this recipe just has too much oil. Not much taste other than oil either. It rolled ok but very easily fell apart in transfer process. Since all the reviews are so great, I will try again maybe adding the full amount of water and then more flour through the rolling process.

White Cake Frosting II

This is the first time I made frosting successfully. It came out wonderful but I did not have any shortening so I used lard and butter. Also we liked the thick consistency so we did not add all the water. My husband said it tasted too much like sugar (which I liked) so he threw in some lemon juice and lemon extract. No matter what it still tasted and looked fabulous. I will use this recipe over and over again.

Carrot Cake III

My kids and I prepared this a few nights ago. We had fun making it a family affair. I did not have any nuts so I prepared sans nuts. However this was one of the best carrot cakes I ever had. It is not very sweet but the frosting more than takes up for that. I think I will find a less sweet frosting recipe. We can't seem to stop eating this cake. I doubled the recipe and we still don't have enough!

Waffles I

Crispy on outside. Soft inside but bland in taste. Made second batch and added more sugar and salt. That does the trick.

Buttery Rolls

Out of all the recipes and attempts to make dinner rolls this time they came out just right. They were soft,fluffy and delicious--better than store bought rolls. I proofed my yeast first with 1/2c of water so I reduced the milk. Also I forgot to add the butter, so later I kneaded in a bit after the first rising. I also forgot the egg wash but they still came out beautiful. I will use this again and again. I think I may add some herbs next time.
