Golden Peach Pork Chops

I made this last night for me and my husband. It was pretty good, but here's some detail for anybody making it: Try 1/8 cup vinegar; thought it was too tart. Definitely brown the pork chops! I used 1/2" boneless chops, and they were well done. If you are using a chop that is about 1/2" thick, I think 3 hours is more than enough time. I did 4 hours, and they were really done. Lastly, it makes a whole lot of sauce (yummy sauce), so I served it over a bed of brown rice, and it was terrific.

Strawberry Pretzel Salad

Here's a way to get some attention with this recipe: during the last minute of baking for the pretzel crust, sprinkle a 12 oz. bag of DARK chocolate chips on top of pretzel mixture. When you pull it out, spread the chocolate over the pretzels and make as directed. Your guests will be surprised at how the addition of chocolate makes this like a chocolate covered strawberry!

Grilled Salmon Steaks with Savory Blueberry Sauce

this recipe won me a lot of compliments. just drizzled olive oil and peppered the salmon steaks (6 oz was good size). my guests were surprised at how well the blueberry sauce complemented the fish. served with roasted red potates and roasted asparagus/cherry tomatoes. whole thing took 20 minutes. I was psyched. Definitely making this one again!

Cranberry Pistachio Biscotti

I've made 7 batches of this for this Christmas. I love that it's not too hard and not too soft. I recommend a 1-to-1 cup ratio of nuts to cranberries to better balance the flavor. Also, upon the 2nd baking, I did 8 minutes on BOTH sides (not just one), otherwise it was too soft. So I also suggest 8 minutes on one side, flip over and another 8 minutes on the other side.
