My Yummy Country Apple Dumplings
About this Cook
I live with my hubby and our two Pembroke Welsh Corgis in Northwest Arkansas. We are outside the city and grow a lot of fresh veg during our growing season. I love to experment with new things. This year it's Swiss Chard. So far I haven't had enough for a "mess", but I have used it torn up in salads.
My favorite things to cook
Almost anything at all. Probably would be easier to say what I didn't like to cook.
My favorite family cooking traditions
Oh, that has to be my Cranberry Sauce. The recipe came from an aunt years ago and it's a tradition every year. Fresh Cranberries, Oranges, pecans and sugar. I prepare it and seal into little jars and what we don't eat we give away. Sooooooooooo Good!!
My cooking triumphs
I have FINALLY learned how to make an omlette without using one of those leaky two sided omlette pans!! I haven't got it down perfectly yet, but I'm getting there. :-)
My cooking tragedies
Oh gotta be Artisan Bread. I'm still trying and someday I will master the art of that "sticky dough" I LOVE the crispy crust and soft inside. I wll not give up!!

Country Apple Dumplings
These are amazing!! I didn't change much, but here is what I did change. First I halfed the recipe. Then when I went to get my Crescent Roll dough, I found one that said "Big and Flaky" so I thought I'd try those. I used two apples, cut into quarters and they fit into the larger dough just fine! Since we don't drink Mountain Dew, I used what I had, most of a small can of Sprite. Lastly I sprinkled Demerara Sugar over the top after I finished the dish and right before I popped them into the oven. My hubby says these are the BEST Apple Dumplings he's ever had and so easy!! Thank you Docswife, great recipe.

Truck-Stop Buttermilk Pancakes
Probably just me but these pancakes were NOT very good. I'll find another recipe next time. :-(

Grandma's Lemon Meringue Pie
Four stars because we haven't actually cut the pie yet, but I did taste the filling and it was yummy. I might add a bit of lemon extract. I used frozen lemon juice and made 1 1/2 times the recipe. I think it looks lovely as it cools on the counter for an hour before it goes in the fridge. I think Hubby will like this one!
