Mayonnaise Cookies

We loved these. I use vegan mayonnaise and they always turn out great. I've made them with vanilla as per the recipe, and I've omitted the vanilla and used cinnamon/cloves/ginger instead. They are delicious either way!

West African Vegetable Stew

This was delicious. I made it vegan by using veggie broth instead of chicken. I also omitted the oil, increased the broth to about 24 oz, omitted the tomato (didn't have one), increased cinnamon and red pepper to 1 tsp each, and used frozen spinach instead of fresh (that was all I had on hand). We loved it. A great and unique flavor combination.

Cream Cheese Sugar Cookies

We enjoyed the flavor and texture of this cookie a lot. The dough is a little sticky, but nothing that cannot be worked with after a) the recommended 8 hour refrigeration and b) extra sprinkles of flour. I've made this recipe a few times - once with the listed egg yoke, and afterwards with a powdered egg replacer. The egg replacer worked just fine for me in this recipe. Thanks so much!

Healthy Banana Cookies

I loved these. I was on a granola bar kick a few days ago, and I made these for myself as a healthy granola bar replacement snack. Halved the recipe and shaped into bars. Used applesauce instead of oil and they held together absolutely wonderfully. For me, this is a keeper. I may not need to buy packaged granola bars ever again. These are not overly sweet and do not taste like a dessert cookie, but I love them and they suit my purposes quite well. Thanks!

Gobble Up Granola Snacks

These are good and, with some changes, great. I made them the first time exactly according to instructions. They were decent, but somewhat crumbly and bland. The second time, I used 1/4 c honey in addition to the 1/2 c corn syrup, added chopped cashews (because I had some laying around), and subbed dried cranberries for raisins. They were excellent. BF, who considers himself a granola aficionado, was enthralled and called me from work to tell me how amazing they were. Thanks so much for this great base recipe!

Coconut Macaroons III

I'm rating this based on what BF said and, according to him, they are his new favorite. I thought they were incredibly easy to make and would be great dipped in chocolate. Regarding other reviewers' comments on the stickiness of the batter: yes, the batter is sticky, but I had no trouble scooping out spoonfuls, shaping them into balls with my hands and then plopping them down on the cookie sheet. Vegan Brownies

I made exactly per the recipe and enjoyed the brownies, but next time will tinker with the ingredients. While they were good, the could have been less oily. I'm definitely making these again, but will sub some/all oil for Earth Balance non-hydrogenated spread.

Cool Whip Cookies

I received rave reviews from BF on these cookies. They were very easy and quick to make. To alleviate the problem of overly-sticky dough mentioned by some reviewers, I threw the dough in the freezer for 15 minutes prior to scooping and rolling in the sugar mixture. Had no trouble at all by doing this. I used yellow cake mix and added crushed gingerbread cookies to my batter. Great!

Mexican Bean Burgers

These burgers were very good. Even though the recipe did not call for egg, my burgers stayed intact throughout the cooking process (I cooked them in a pan with only a little cooking spray). I used the salsa and flour as needed and, for both ingredients, ended up needing less than the recipe called for. We ate them open-faced with spinach, tomato, mustard and relish. Wonderful. Thank you!

Best Ever Banana Bread

My family loves this recipe. I've made it in loaf, mini loaf and muffin form. Last time, I made muffins and topped them with crumbled gingerbread cookies, which was a nice twist. This recipe is easy, tasty and reliably good. Thank you!

Sausage Smothered in Red Cabbage

This is one my favorite recipes. I substitute spicy vegetarian sausage crumbles for the kielbasa and it always turns out great. I've even made it without any sausage at all because I love the tangy taste of the cabbage in this dish. Thanks!

Basic Flaky Pie Crust

The taste of this crust was great, and it was extremely workable with one change: use 1/4 c butter and 1/4 c shortening. The first time I made it, I followed the recipe exactly (using shortening only), and the dough was much more sticky and difficult to work with. The second time, I subbed half of the shortening for butter and... voila, a beautiful, easy to work with crust. Thanks!

Cheddar Buttermilk Biscuits

My boyfriend and I LOVED these. The were flaky, fluffy and very flavorful. I'm not very experienced with cutting butter into flour mixtures (I live in a tiny apartment and don't even own a food processor pastry cutter), but I got these to turn out by grating frozen butter and then adding it to the flour mixture. I have made these several times, sometimes with butter and sometimes with margarine, and they have turned out lovely either way. I find the cayenne taste to be very prominent (and I like that), but I have made them without the cayenne when baking for family members that don't like things spicy. Thanks for this great recipe!

Cottage Cheese Spinach Chicken

We really liked the concept and healthfulness of this dish. I will admit that I substituted Italian seasoning and garlic for the cajun seasoning and onion, respectively. I also omitted the butter to make it a bit lighter, and the chicken was still moist and very flavorful. Unlike other reviewers, I had no problem securing the breasts with the toothpicks. I will definitely make this again. Thanks!

Banana Banana Bread

This banana bread is unreal. Dense, moist, flavorful and perfectly sweet. My boyfriend and family raved! =) I added chocolate chips, but will try it without them next time. I wanted muffins, so I halved the recipe and got 10 standard sized muffins. Will absolutely be making this one again!

Low-Fat Blueberry Bran Muffins

Incredible. I must admit that I did tweak this recipe slightly according to what I had on hand: I used Fiber One cereal rather than bran flakes, I added only about 2/3 c. skim milk, and I replaced the brown sugar with 1/4 c. honey. For being so healthy and low calorie, these muffins were super. Thanks for the great recipe!

Carrot Cake III

I've made several carrot cakes and must say that this one is extraordinarily moist and flavorful. I made this into cupcakes and everyone loved them! I used half white and half brown sugar, according to the suggestions of some others. Everything else I kept the same. Yum!
