Brown Sugar Meatloaf

Reviewed: Jun. 13, 2011
I did not make changes to this recipe. I noticed all the 4-5 star ratings came from those who did make changes. This meatloaf is bland, and putting the sauce on the bottom causes it to be dry. I think the meat:crackers:milk ratio is way off. I had to cook it for 1 -1/2 hours before all the pink was gone. And, with just a hint of ginger, this meatloaf had no flavor. Because of the ingredients I had on hand is why I made this recipe tonight and not my favorite. The Mini Meatloaves by Tonya Swope is my family's absolute favorite!!

Grandpa's Classic Coney Sauce

Reviewed: Jul. 27, 2010
With a few tweeks I could give it 5 stars. It was a little too sweet. I changed the servings to 6. And, to satisfy kids, I opted out of the onions. Here are my changes: Cut the sugar in 1/2, 1 tsp onion powder, 1/4 tsp celery salt, no table salt added, and chopped fine with my Ninja. With these changes, it was awesome! It reminds me of the hot dog chili from the Bantam Chef in Walhalla, SC.

B and L's Strawberry Smoothie

Reviewed: Apr. 8, 2010
I gave this 4 stars because it needed a little lemon juice to be 5 stars. If you double the ingredients, like I did, then add 1 full tsp. lemon juice. Otherwise, just 1/2 a tsp. will do for the default ingredient portions. I used frozen strawberries and did not use any ice. I used my Ninja to make this, and it was awesome and smooth! I did not take the route to add a banana because I wanted a strawberry smoothie, not strawberry and banana smoothie...that would just change the name of the recipe...LOL

Too Much Chocolate Cake

Reviewed: Feb. 11, 2010
Ok..First off, this is probably getting 5 stars by so many people because it is kinda hard to mess up a box cake. So, keep in mind that it "is" a box cake, therefore if you generaly like box cakes, then you will probably give this a 4-5 star rating because of the few simple changes to make it a little better. It is a good cake. I will make it again with one change. Rather than coating the pan with oil, I will use Crisco non-stick Buterry Spray. I took one star away because this cake is similar to a pudding cake, and the recipe for the Thick'n Fudgey Tripple Chocolate Pudding Cake is amazingly better! I took another star away because of the oil taste on the outside of the cake.

Orange Dream Punch

Reviewed: Feb. 8, 2010
I used 50/50 Orange Sherbet and Vanilla Ice Cream. Before adding the Ginger Ale, I microwaved the mix just until it started to melt/soften. Then I mashed it with a potato masher. Finally, I added the soda. It was perfect!!

The Best Banana Bread

Reviewed: Dec. 13, 2009
Very tasty. I almost doubled the bananas though. We like more of a banana flavor in ours. I believe that is up to the individual's taste. It was great! Thank You Libby!!

Jo's Rosemary Bread

Reviewed: Dec. 13, 2009
For the bread machine, it turns out best if you add the ingredients in order from the bottom up (yeast to water). One reviewer stated that she used 1 cup of milk rather than 1 cup of water. So, I split the difference and used 1/2 a cup of milk and 1/2 a cup of water. The bread was awesome! This recipe is a keeper!!! Thank you Jo!!

Easy recipe. Fun to do with the kids too. We do not like raspberries, so we used strawberries instead.

Red Velvet Cake IV

Reviewed: Dec. 25, 2007
I am an experienced cook, and here is my review: I followed this recipe to the exact ingredients and directions given. The frosting taste too much like cream cheese and is not stiff enough for frosting a layered cake. It is NOT runny, and will work great on a single layer or cupcakes. However, after frosting my 3-layer cake, I placed my cake in the fridge to allow the frosting to stiffen even more. And, 5 minutes later I opened the fridge door and found my top layer lying in front of the cake plate. For those of you who are questioning if a Red Velvet cake is a chocolate cake, the answer is “yes.” And, this cake is by no means in the chocolate cake category. It just does not taste like chocolate. For ‘just a cake’, it is good. But, not for Red Velvet because, again, it should be a chocolate cake. My suggestion to alter this recipe would be to add some confectioners sugar, vanilla flavor, and a dab of flour to the frosting. As far as the cake itself, I would reduce the eggs to 2 and then add 3 eggs whites, double or triple the cocoa, and cook for 10 minutes longer.
