Slow Cooker Chicken and Dumplings

It is quick to prep, but the end result ended up tasting a lot like the canned chicken and dumplings one can buy in the store. I think in the future, I will forego one or both cans of the canned soup, and focus more on using chicken stock with a bit of flour to thicken as necessary.

Classic Peanut Butter Cookies

Very tasty cookies! I cooked a bit shorter than recommended in the recipe, 8-9 minutes, then let the cookies cool on the sheet.

Spiced Persimmon Butter

I had a whole bunch of persimmons collected from the yard, and had no idea what to do with them. Thankfully, I found this recipe and now I've got a few mason jars of the stuff. At my wife's request, I cut way down on the cinnamon, using maybe 1/2 of the amount listed, and the spicing at that amount is quite adequate in my opinion. As to other changes: I didn't have any agave syrup, so I substituted honey and it worked well. I also threw in about 3/4 teaspoon kosher salt along with the cinnamon and cloves. I have never had persimmon butter before. It reminds me strongly of pumpkin pie filling--making me think I may turn one of these jars into a persimmon pie for the holidays.

Hot and Sour Chicken and Cabbage Soup

This is a great simple recipe that tastes delicious. The prep time is exaggerated. I used some leftover stock and turkey breast from Thanksgiving and it ended up taking about 20 minutes from start to finish. I like it with a bit more "sour" to it than as written, but that's a personal preference. I also like someone else's suggestion of adding Tom Yum paste and cilantro; haven't tried it yet, but I will on my next one.

Deluxe Blackberry Pie

Procedurally, there are several things wrong with this recipe. As an example, it is advised to mix 4 tablespoons of corn starch into 2 tablespoons of brandy before combining with the rest of the liquid. In addition, I found the filling to be way over-spiced to the extent that you can barely taste anything else in the pie. I plan to make more blackberry pies, but I will not be using this recipe again.

Pupu Balls

The aroma and flavor of the meatballs is great, but it was way too salty for both myself and my wife. I think next time I will cut the soy sauce by 3/4, and substitute some Worcestershire sauce and a bit more water to make up the difference.
