Cucumber Melon Salsa
I halved this recipe in an attempt to salvage what was not a very flavorful melon. Great results!! Since my cantaloupe was not very sweet, I added a small squirt of agave syrup. Also, a sprinkling of cayenne for more punch. We ate the salsa with tortilla chips and served it on homemade chicken/spinach burgers.

Carrot, Tomato, and Spinach Quinoa Pilaf
Delicious! My first time cooking quinoa...although I've had a bag in the pantry forever. I did not have bouillon granules so I used 2 tsp of chicken base. Canned broth should work, too (in place of water).

Soft Oatmeal Cookies
Delicious! Made the dough and then froze in portions. Defrosted, baked, and devoured. Followed recipe exactly.
