Best Brownies

Amazing! Chewy, not overly sweet but definitely sweet enough. I doubled the recipe and baked in a Perfect Brownie pan. They definitely turned out perfect! The only change I made was to the frosting. Just added a tiny splash of milk to help smooth it out and make it easier to spread.

Weeknight Pork Chops

I was looking for a new way of making chops tonight and the title was, of course, perfect. Reading the ingredients of the sauce, I had an eyebrow raised and was curious. I went to my fridge and found out I did not have strawberry jam, cider vinegar, or the prepared mustard. So I made due with a tayberry jam, red wine vinegar, and spicy brown mustard. Wow, it was good! I think this really is a simple recipe that you can switch up with what you have on hand. Even my 8 year old son who hates most meats said, "Mom, this is really good!".

Low-Fat Blueberry Bran Muffins

What a great muffin! It's so easy to make, add in that it's low fat and perfectly sweet enough. I had to use frozen blueberries, but I really don't think it made a difference. If you do use frozen, do not thaw them before adding to the batter. This is by far my favorite muffin!

Chicken and Mandarin Oranges

This chicken was so/so. It was rather bland, even after the cilantro and adding toasted sesame seeds. But it was definitely healthier than many other recipes and very easy to make. The best rice to use with this is jasmine.

Molasses Sugar Cookies I

Best ginger/molasses cookie I've ever tasted!!! Most get too hard and crunchy where these are perfectly soft and chewy, with just a slight crunch around the edges. I had to alter the shortening though, so I used 1/2 c regular shortening with 1/4 butter (not margarine).
