Very good! I find that the liquids are a bit off since I always have to add more but otherwise it is fantastic. I do not use any water I use all broth. Made with chicken and beef broth and both times it was great.

Lemon Garlic Tilapia

Very nice. I used flounder because we prefer that. I grated my garlic on a microplane to get more of a mush that would distribute through the sauce more, then added it with the butter, 1 tsp olive oil, salt, pepper into a small sauce pan and simmered it for just a few minutes. I laid my fish out in a pan, seasoned each piece then I spooned the mixture atop each fillet and baked. We will definitely make this again.

Seared Sea Scallops

We did not like this at all. The flour coating created a consistency with the scallop that we did not like and the seasoning overpowered the taste of the scallops. Next time I will just try with the herbs and regular salt and pepper and finish with the lemon juice and leave the rest of it out.

Pasta with Peas and Sausage

Very nice basic recipe. I made some changes based on what I had and my likes. I used 1 lb HOT Turkey sausage, Fat Free Half and Half as that is what I had, added 1 medium onion chopped and added 1/4C grated cheese into the sauce. I will definitely make this again as it was quick, easy and very tasty for what was literally a 15 minute meal.

Best Steak Marinade in Existence

Really great and the first time I only marinated for 4 hours. I have 2 that have been marinating since Saturday. Can't wait to see how they are doing with even more "soaking" time!

Yum! This was fabulous. I made as is and slightly underbaked. Fabulous. It was great room temp and also great next day stone cold out of the fridge. I will definitely be making this over and over.

Broccoli Beef I

Very nice recipe except it seemed to be missing a bit of a kick for our tastes so after I tasted it I added 1/4 tsp cayenne and 2 more TB soy sauce. PERFECT! I will definitely make this again!

Alfredo Light

Well I liked my version - lol! I added chicken which I browned first with salt, pepper and garlic powder. Made the sauce with fat free half and half, made a roux with som eoil and the flour in with my onion/garlic mixture before adding the liquids. I added the broccoli in with my pasts (penne) and also some sliced dry packed sun dried tomatoes. Nice meal.

Pumpkin Cake III

Very nice. I too subbed applesauce for most of the oil. I used about 3/4 C applesauce and filled the cup the rest of the way with the oil. I did not have non-expired baking powder(whoops)so I eliminated the powder, baking soda and salt and used self-rising flour instead. I like things on the sweet side so next time I will add a glaze or a frosting. I also made it in a bundt pan - in my oven it needed to cook for about 65 minutes. Very nice - I think I will make this for Thanksgiving for a change from the same old pumpkin pie.

Roasted Garlic Cauliflower

Very nice! We'll definitely do this again. I was cooking with something else so I had it in at 450 for 15 minutes, then lowered to 350 for 20 minutes. I did not need to broil and forgot to add the cheese. It was tasty anyway and I cannot wait to make it again and remember the cheese! LOL

Baked Paprika-Parmesan Chicken

Wonderful tasty recipe although a bit too buttery. I will definitely make this again and will experiment with less butter and/or oil to get to the level we'd enjoy most. I used a really nice Pecorano Romano which I freshly grated using a medium hole grater so I got nice slivers of cheese. Definitely avoice processed "fake" parm cheese or pregrated stuff. The better your cheese is, the tastier this will be.

Apple Crisp III

I made as is except as I had VERY fresh and juicy apples - I omitted all the water. The recipe taste overall was fantastic but I did find that I had to cook longer to get the top bron and crispy. Definitely a keeper as it was very easy and tasted like I put more effort than I did!

Chimichurri Sauce for Steaks

Very nice! I threw it in a large meauring cup and used my hand blender. Came out nice. If you're not a fan of fresh/raw garlic - cute down the cloves to 3 - otherwise this sauce is fantastic. I marinated a steak in some and used the "raw" sauce over it after cooking. Whatever was leftover I threw raw shrimp in to "marinate" then threw it all in a pan the next day to sautee, diluted it with a bit of water and served it over linguine. Definitely a do over for us.
