Refried Beans Without the Refry

Great recipe that's easy and authentic! I made this for a party to go with my home made enchiladas. It was a huge hit and there were no left-overs. I'll try with black beans or a combo of black and pinto next time like others have suggested.

Slow Cooker Chicken Stroganoff

Crispy Cucumbers and Tomatoes in Dill Dressing

Actually I'd give this a 4.5. I made it for my husband's family reunion and it was a big hit. I followed suggestions for using English cucumbers, scraping out the seeds and cutting into chunks. I also cut the tomatoes into chunks rather than leaving in wedges. I substituted red wine vinegar and olive oil. The fresh dill makes it so good. I've already made it a second time and several people asked me for the recipe. This will be part of my summer salad repertoire.

Sangria! Sangria!

I made this for my husband's family reunion and it was a huge hit! Guys who said they didn't care for Sangria were coming back for more and the beer was hardly touched. I used carbonated water - otherwise it might be too concentrated. I cut up the fruit into smaller pieces as other suggested. Also, know that while the taste is smooth, this stuff is potent. I'll definitely make it again.

Never Fail Chocolate Chip Cookies

For years I gave up making choc. chip cookies because using the Toll House recipe they turned out as a gloppy mess. This is the recipe I was waiting for and I think I can blame it for a 2 pound weight gain over the holidays! They are addictive. Thank you for bringing homemade choc. chip cookies back to my house. I mixed semi-sweet and milk choc. chips (ratio 3:1) and it was a perfect blend.

Slow Cooker Chicken Taco Soup

This was awesome! I followed the recipe and was a little concerned at first that it was going to be too spicey. As it cooked and the flavors mellowed it was just right. A squeeze of lime and some fresh cilantro to brighten up each bowl as you serve. Definitely a keeper and a good option for company.

Green Salad with Cranberry Vinaigrette

This was a very nice dressing/salad. I gave it 4 stars because of the tinkering I had to do with the dressing. I used 1/2 fresh cranberries and 1/2 craisins and it was very tart. I tried adding 1/2 tsp. of white sugar but that really didn't cut the tartness. After I added about 1 tsp of corn syrup the dressing was very good. I will definitely make this again with the above changes.

Sparkling Punch
